Well I really enjoyed this โ˜•๐Ÿ‚๐Ÿ

I'm not a summer girl at all, so this really feeds my soul ๐Ÿฅฐ

So it's sofa position in-between nurse appointments which is really boring ๐Ÿ‘Ž

Though apparently this is an opportunity to sort a lot on my to do list that I put off ๐Ÿ˜‚

Good morning all,

Apologies for shoving such a delight in your face at this time but here's your reminder that making use of cooking apples that are dropping early is really quite easy!

Just line the pie dish with some ready rolled short crust (or a cake tin, I used a spring form for this one).

I tend to measure with my heart for things like this, just peel and chop enough to go in your pie size of choice, I added some sultanas and chopped walnuts as I love that combination ๐Ÿฅฐ

I added a bit of lemon juice, sugar (any will do and you want just enough to coat the fruit) and cinnamon, give it a mix and add it to your pastry base.

Roll out the top and pop it on, you can put a couple holes in to release the steam but don't panic if you didn't, it will just bubble the top up, not the end of the world ๐Ÿ’•

I always egg wash and add Demerara sugar because I think it just adds a little something โœจ

Bake for around 35/45 mins, you may need to cover the top to stop it from burning with foil at around the 25 mins mark ๐Ÿ‘Œ

Of course making your own pastry is normally nicer but as I'm meant to be on bed rest ๐Ÿ‘€ I went for ready made ๐Ÿคญ

This will give you that wonderful autumn feeling ๐Ÿ‚๐Ÿ

What do you do when you end up with a small batch left of wild damsons that are rapidly going soft?

You enlist the kids, raid the baking cupboard, and make chutney! ๐Ÿ‘ฉโ€๐Ÿณโœจ

We left the fallen fruit on the ground for the local wildlife to feast on (the blackbirds, badgers, and butterflies can have those ones!), picked a handful of reachable ones from the branches, and spent a solid 35 minutes getting the saucepan on to turn a handful of squishy, random fruit into the most incredible, glossy, dark chutney for a block of cheddar. ๐Ÿง€

If youโ€™ve got a damson or wild plum tree in your garden or nearby, why not harvest a few from the higher branches and leave the windfalls for the birds and creatures below?
And if you don't have a tree, shout out on your local group or ask aroundโ€”someone in the area usually has a tree groaning with fruit that they're happy to share!

If you want to give it a go, here's how I made mine.

350g wild plums or damsons
100ml malt vinegar (apple cider vinegar or white wine vinegar!)
100g dark brown sugar
1 small onion, finely chopped
50g raisins or sultanas
1 tsp ground ginger & ยฝ tsp ground cinnamon
30g chopped walnuts (optional, but lovely for crunch!)

How to make it:

Toss the chopped onion, raisins, vinegar, sugar, spices, and salt into a pan and simmer for 5 minutes.

Throw in the whole plums. Let them gently bubble on low heat for about 25โ€“30 minutes. As the skins break down, the stones will float to the topโ€”just scoop them out with a spoon!

Stir in the chopped walnuts for the last 5 minutes of cooking.

Once itโ€™s thick, dark, and glossy, spoon it into a warm, clean jar.

Itโ€™s proper delicious, costs next to nothing, and uses up whatโ€™s right on our doorstep.

If you like a strong vinegar taste, use it straight away, if not, give it time to settle in a cupboard ๐Ÿ‘Œ

Have you become successful despite growing up hearing 'there's nothing to do around here', 'it's a boring place to live', 'you need to move away or go to uni to make something of yourself' and willing to spare the odd half hour here and there sharing your experiences and inspiring the youth of the Forest of Dean to see the potential on their doorstep?

Too often, young people who live in rural, disadvantaged areas grow up feeling disconnected from their community and seeking validation in the wrong places, be a part of changing that narrative!

Unfortunately I have a broken down wound from my surgery ๐Ÿ‘Ž

So I'm trying REALLY hard to rest but there are a few tasks that I'm unable to restrain from ๐Ÿซฃ

Like saving these strawberries that were going to be binned if they didn't find a home ๐Ÿ˜ฒ

So a quick chop and freeze to use at a later date.

Hopefully I'll be able to show you some delicious makes from them soon ๐Ÿ’•

Tastes a bit like a snickers but has a nice dose of fibre, the only problem is I eat them all if I make too many ๐Ÿซฃ

I absolutely love making my own tomato base sauce which I use for a multitude of dishes but I often chuck a load of tomatoes and veg in the air fryer, cook it off till it's soft then add it with some passata, seasoning, bit of BBQ sauce and keep it in a pot in the fridge for a really easy pizza sauce!

Literally just spread it on toast, crumpets, baguettes, rolls ๐Ÿคท whatever it is, then add some toppings like chicken, pepperoni etc and some cheese and air fry ๐Ÿ‘Œ

Kids have consumed some veg, bit of protein and fat from the cheese and most importantly enjoyed it โค๏ธ
