Fresh to Dried
The winter/ trumpet chanterelle (Craterellus tubaeformis) is a power house in regards to its nutritional value; 50% + protein, vitamins B, D & E, its also very good for the skin, it has antioxidants and anti inflammatory properties too. A real health benefit that can be laid out on a plate.
Now, I know millions of people can’t abide mushrooms. The texture puts people off. However I firmly believe not to have mushrooms in your diet is, quite frankly, bonkers. This is one of the reasons why I dry my mushrooms. They can be blitzed and made into condiments so that texture is not a problem but the goodness is kept locked in.
As ever please ID, ID and ID again before you scoff any wild fungi. If you don’t you may just fall foul of Terry Pratchett’s simple rule of mushrooming, “ Every mushroom is edible once….”
