Sun-dried tomato & basil butter beans 🫘
Ingredients:
✨ Sun-dried tomatoes
✨ Cashew nuts
✨ Basil
✨ Garlic
✨ Tahini
✨ Nutritional yeast
✨ Spinach
✨ Butter beans
Method:
🔸Soak the cashew nuts in boiling water to soften
🔸Add sun-dried tomatoes, cashews, garlic, tahini, basil & nutritional yeast to a blender
🔸Add some water to loosen
🔸Transfer to a saucepan and add butter beans
🔸When at the desired consistency, add spinach
🔸Serve with buttered toast
