Blender Cinnamon Swirl Muffins | Full recipe below👇
These muffins taste just like cinnamon buns. They are so good – the perfect afternoon snack ❤️
Ingredients:
2 cup (200g) almond meal
2 eggs
ÂĽ cup (40g) chia seeds
2 bananas, over ripe is best
ÂĽ cup (60ml) coconut oil, melted
ÂĽ cup (60ml) almond milk, or milk of choice
2 tbsp maple syrup, or honey
1 tsp cinnamon
1 tsp baking powder
For the topping:
2 tbsp hulled tahini
1 tsp cinnamon
Method:
Preheat the oven to 160°C or 320°F. Grease a muffin tin with olive oil or coconut spray or use muffin liners.
In a blender, add all of the ingredients, except the tahini and 1 tsp cinnamon. Blitz until you’ve reached a smooth consistency.
Spoon the mixture into the muffin tray and bake for 35-40 minutes or until the muffins are golden and cooked through.
Meanwhile, combine the tahini and cinnamon to make the cinnamon swirl.
Once cooked, remove the muffins from the oven and drizzle each muffin with a swirl of the tahini cinnamon.
Store in an airtight container for 3-4 days or the freezer for up to 2 months.
