A little taste of Mid Ulster in Paris 🇫🇷☘️

Such a great few days at IFTM Top Resa, France’s leading international travel and tourism trade show, meeting lovely people, making new connections and sharing a little of what we do at Bakehouse NI.

I couldn’t go without bringing some homemade barmbrack and Guinness wheaten bread along too which paired deliciously with the oysters from Réalt na Mara Shellfish

A big thank you to the Ireland team for looking after us so well. Home again with lots of new ideas, contacts and great memories. 💚

Just getting into Autumn soup vibes with this fridge and store cupboard raid Mushroom and Butterbean soup.

I fried a couple punnets of chestnut mushrooms and an onion off with a fat garlic clove in a little olive oil.
Then I added a k**b of butter, a couple of raw potatoes, vegetable stock, bay and thyme.
I cooked that until the potato was tender and added a jar of butterbeans, a teaspoon of porcini powder and nutritional yeast and warmed it through before blitzing it with a little double cream.
This would give 4 generous portions.
Delicious and very filling

Lovely morning recently at Castle Mall Shopping Centre with Antrim Community Fridge, where we enjoyed an Italian-themed cooking class making fresh pasta and garlic flatbreads. 🍝🫓

A little look back at my recent live cooking demonstration at Taste Mid Ulster in Fivemiletown.

A huge thank you to Mid Ulster District Council for inviting me to share one of my favourite summer afternoon tea menus.

It was wonderful to meet so many people, chat about local food and showcase my family recipes inspired by the fantastic seasonal produce we have locally.

On the menu…

🥂 Apéritivo
• Dart Mountain cheese dart mountain cheese & chutney on homemade potato bread
• Fennel, smoked salmon & grapefruit salad
• Elderflower spritz

🥣 Savoury Prelude
• Roast red pepper & tomato soup
• Homemade Irish focaccia bread

🫖 Freshly Baked Scones
• Served with homemade raspberry jam & clotted cream

🍰 Fine Patisserie Selection
• Rhubarb crunch cake

🍓 Decadent Dessert
• Passionfruit & raspberry syllabub jars
