Wrapping up our ‘Meet the Team’ series with none other than !

“I’ve been working in Speciality Coffee since 2012. I first joined Bailies in 2016 and within my first year I competed in national competition, placing fifth in the Irish Barista Championship.

I became a certified AST in 2018, and have delivered the Barista Skills and Brewing modules, as well as delivering wholesale training.

In recent years, I have also worked on developing learning resources and consulting with Bailies wholesale customers.

I enjoy creative problem solving and I find that within the world of speciality coffee, you are never short of creative problems!

As a trainer, I particularly enjoy nurturing long term training and skills development, helping baristas to continually improve. I think it is important to create a welcoming and comfortable learning environment so that everyone can feel safe to make mistakes and to ask questions as they learn and develop.

This month I am hosting an SCA Intermediate Barista Skills course, aimed at fledgling baristas who have gotten to grips with the basics and are keen to expand their skills further.”

Introducing, the Bailies Academy Team!

We thought that we’d take a moment to introduce ourselves.

First up is none other than Sarah Hannaway, , Bailies Academy Trainer and the 2020 Irish Barista Champion 🏆

“I began working for in 2016, which kick started my professional Barista Training career.

I have been making and enjoying coffee for nearly 15 years, starting off as many of us do, at home, with my beloved French Press!

Pre Bailies, I spent around 7 years with my local coffee chain, managing a few different sites across Belfast. Towards the end of my time managing, I had gained more experience and had been avidly spreading my wings at home, trying my hand at brewing and tasting coffees from all over the world.

This led me to a coffee shop which could offer more experience, that allowed me to spend a year developing and growing a successful ‘third wave’ experience within Belfast City centre.

I have been a qualified AST (Authorised SCA Trainer) for 3 years promoting the standards and practices of the , and I am delighted to be a part of a programme that promotes coffee knowledge and barista development.

I have been participating in regional Barista Championships since 2011, competing then in the Irish Brewers Cup and most recently competing in and winning the Irish Barista Championships in 2020.

My greatest interest is sensory development and I have been expanding and progressing our course offering under this skill set- courses which will be available as soon as this month with the launch of our Bailies ‘Boot Camp’ on the 22nd and 23rd of November.
