Chicken Biryani Recipe
Here’s an easy recipe to make mouthwatering chicken biryani:
Ingredients
For Marinating the Chicken:
• 1 kg chicken (cut into pieces)
• 1 cup yogurt
• 2 tbsp ginger-garlic paste
• 1 tsp turmeric powder
• 2 tsp red chili powder
• 2 tsp biryani masala (or garam masala)
• 1 tsp cumin powder
• 1 tsp coriander powder
• 2 tbsp lemon juice
• Salt (to taste)
For the Rice:
• 3 cups basmati rice (soaked for 30 minutes)
• 6 cups water
• 1 bay leaf
• 4-5 cloves
• 2 green cardamoms
• 1 cinnamon stick
• 1 tsp cumin seeds
• Salt (to taste)
For the Biryani:
• 4 tbsp oil or ghee
• 3 large onions (thinly sliced)
• 2 tomatoes (chopped)
• 2 green chilies (slit)
• 1/2 cup fresh coriander leaves (chopped)
• 1/2 cup fresh mint leaves (chopped)
• A pinch of saffron soaked in 1/4 cup warm milk (optional)
• 1/2 cup fried onions (for garnish)
Instructions
Step 1: Marinate the Chicken
1. In a large bowl, combine chicken with yogurt, ginger-garlic paste, spices (turmeric, chili powder, biryani masala, cumin, coriander), lemon juice, and salt.
2. Mix well and marinate for at least 1 hour (or overnight for better flavor).
Step 2: Prepare the Rice
1. Boil water in a large pot and add bay leaf, cloves, cardamom, cinnamon, cumin seeds, and salt.
2. Add the soaked basmati rice and cook until it is 70% done (grains should still be firm). Drain the rice and set it aside.
Step 3: Cook the Chicken
1. Heat oil or ghee in a large pan. Add sliced onions and sauté until golden brown.
2. Add chopped tomatoes and green chilies. Cook until the tomatoes are soft.
3. Add the marinated chicken and cook on medium heat until the chicken is tender and the oil separates from the masala.
Step 4: Layer the Biryani
1. In a large, heavy-bottomed pot, layer the cooked chicken at the bottom.
2. Add a layer of partially cooked rice on top.
3. Sprinkle chopped coriander, mint leaves, and fried onions. Drizzle saffron milk (if using).
4. Repeat the layering process, ending with a layer of rice.
Step 5: Dum Cooking
1. Cover the pot with a tight-fitting lid. If the lid is loose, seal it with dough to trap the steam.
2. Cook on low heat for 25-30 minutes. This process is called “dum cooking” and helps infuse the flavors.
Step 6: Serve
1. Gently mix the biryani layers before serving to ensure even distribution of flavors.
2. Garnish with additional fried onions and fresh herbs. Serve with raita or salad.

Ingredients:
• 500g chicken cubes
• 1 medium onion, chopped
• 2–3 garlic cloves, crushed
• ½ tin of chopped tomatoes
• 2–3 tbsp cooking oil
• Less than ½ tsp chili powder
• ½ tsp turmeric
• 1 tsp ground coriander
• ½ tsp jeera powder (if available)
• Salt, to taste
• 2 tbsp yogurt
• ½ cup water
(Optional garnish: green chilies, fresh coriander, garam masala)
Instructions:
1. Heat Oil
Heat 2–3 tablespoons of cooking oil in a deep pan on medium heat.
2. Cook Onions
Add the chopped onions and sauté until they start to change color slightly.
3. Cook Chicken
Add the chicken cubes and cook until they are lightly browned or appear partially cooked.
4. Add Garlic & Spices
Stir in the crushed garlic, chili powder, turmeric, ground coriander, jeera powder, and salt. Cook on low heat until the spices are fragrant and the oil separates from the mixture. Stir occasionally to avoid burning.
5. Add Tomatoes
Pour in the chopped tomatoes and stir well. Cook until the mixture starts to boil.
6. Add Water & Simmer
Add less than ½ cup of water. Bring the curry to a boil, then lower the heat to medium, cover, and let it cook. Stir occasionally to ensure the curry doesn’t stick to the pan.
7. Incorporate Yogurt
Stir in the yogurt and mix well. Cover and simmer for about 5 minutes, or until the curry reaches your desired thickness.
8. Adjust Consistency
If the curry is too thick, add a little more water and let it simmer until you achieve the right consistency.
9. Finish & Garnish
Turn off the heat and let the curry rest for a few minutes. Garnish with fresh coriander, green chilies, and a sprinkle of garam masala if available.
Serve:
Pair this delicious chicken curry with steamed rice, naan, or chapati. Enjoy! .

Ingredients:
- 2 boneless, skinless chicken breasts, sliced into strips
- 1 red bell pepper, sliced
- 1 cup cherry tomatoes, halved
- 4 spring onions, sliced
- 2 green chillies, sliced (adjust according to your spice preference)
- 1 cup cooked brown rice
- 1 cup cooked quinoa
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon cumin
