There are approximately 10 main varieties of garlic cultivated worldwide. However, the most powerful and universally beneficial compound found in all garlic varieties is stabilised allicin. This bioactive compound is responsible for garlic’s potent antimicrobial, antifungal, and antioxidant properties, making it a cornerstone of its medicinal value.

Allicin is not naturally present in garlic cloves but is formed when the enzyme alliinase reacts with alliin, a sulfur-containing compound, upon crushing or chopping the garlic. While allicin in its natural form is unstable and degrades quickly, advancements in modern processing techniques have allowed the development of stabilised allicin. This stabilised form retains its effectiveness over time, making it a valuable ingredient in supplements, medicinal products, and even natural remedies.
