We returned to our first indoor class last night. Fairford Leys Centre and Jo, did a fabulous job of making us feel safe.
It was so good seeing each other. Jo has been brilliant with her online classes since March. She has kept us together and kept me sane 🤪 So happy we can meet in person again at last all COVID secure and socially distanced of course.
I can’t recommend JBD Fitness and Dance highly enough.

My name is Jo, I am a fitness professional, a mommy, a daughter, a wife and a friend.

Many of you will know I struggled for 10 years before I was able to carry a successful pregnancy and achieve one of my biggest goals on life to become a mommy.

My daughter is now 3 and half and I am still on a journey to regain my full fitness. So, whilst I have an absolute passion to help people become their best selves.. I am still working each and every day of becoming my best self too... and not just in terms of fitness (though that is certainly a part)

Here is a picture from today after my workout 🏋️‍♀️ and the other was taken not long before I feel pregnant.. so although I was not at my personal “smallest” I believe I was almost certainly at my healthiest.. so this is where I am striving to return to.

Since January this year I’ve been working hard on my fitness and nutrition, but allowed myself May (my birthday month) to maintain before I had another push to get those pesky pounds and inches tht I continue to carry.. so I thought I would post today to keep me accountable to stay committed to my goal.

You see , Jbd fitness and dance means the absolute works to me as it means I get to work with wonderful people in a daily basis, but sometimes I forget to focus on myself.. so right now the key is balance!!!

Our little fitness family has such a community spirit.. my members support one Another and lift one another up, I’ve seen this time after time after time... and gosh whilst we are in a pandemic you guys blow me away ❤️ and even more so now we have our lift lean community too.

Never in a million years did I think we would be working online ❤️ but here we are, running a mix of in person and online classes and getting excited about bringing back some empowerment days soon too.

I love my fitness family and I’m so proud of all they are achieving right now and the wonderful way they support one another.

I am so happy and grateful that we are able to stay connected and lift one another in such a positive way.

Hardboiled eggs will keep for about a week in the fridge. Ideal for a grab snack or with a huge salad for one of your meals, High in protein that will fill you u., Why not batch cook a few so you have them on standby, making eggs an easy go to.

Smoky feijoada | Vegetable recipes | Jamie Oliver

**I do like Jamie Oliver's Superfood recipes**
Here’s one for you to try.
Smoky veggie feijoada
Black beans, squash, peppers & okra
Serves 2
Ingredients
• ½ a butternut squash , (600g)
• olive oil
• 1 heaped teaspoon ground coriander
• 1 heaped teaspoon smoked paprika
• 3 mixed-colour peppers
• 2 red onions
• 4 cloves of garlic
• 4 fresh bay leaves
• 2 x 400 g tins of black beans
• 100 g okra
• 150 g brown rice
• 2 ripe mixed-colour tomatoes
• ½-1 fresh red chilli
• 1 bunch of fresh coriander , (30g)
• 1 lime
• 2 tablespoons natural yoghurt
Method
1. Preheat the oven to 200°C/400°F/gas 6. Halve and deseed the squash, then carefully chop into 3cm chunks. In a large roasting tray, toss and massage it with 1 teaspoon of oil, the ground coriander and a pinch of sea salt and black pepper. Deseed the peppers and cut into 3cm chunks, then, in a separate tray, toss and massage them with 1 teaspoon of oil and the smoked paprika. Place both trays in the oven for 35 minutes, or until softened.
2. Meanwhile, peel and finely chop ¼ of an onion and put aside, then roughly chop the rest and place in a large casserole pan on a low heat with 1 tablespoon of oil. Crush in the garlic, add the bay leaves and a good splash of water and cook for 20 minutes, or until soft, stirring regularly. Tip in the beans, juice and all, then half-fill each empty tin with water, swirl and pour into the pan. Simmer until the time is up on the squash and peppers, then stir both into the pan. Trim, finely slice and add the okra, and simmer for a further 20 minutes, or until the feijoada is dark and delicious, loosening with an extra splash of water, if needed. Meanwhile, cook the rice according to the packet instructions, then drain.
3. To make a quick salsa, deseed the tomatoes, then finely chop with as much chilli as you like and most of the coriander leaves. Scrape into a bowl with the reserved finely chopped onion and toss with the lime juice, then season to perfection. Remove 4 portions of feijoada, bag them up and once completely cool, freeze for a rainy day, when you’ll be really grateful it’s there. Serve the remaining feijoada with the rice and salsa, a spoonful of yoghurt and a sprinkling of the remaining coriander leaves.

Don't forget to season your food with acid, too.
Everybody knows that salt plays a crucial role in cooking — but not everyone knows the importance of acid. Acid helps elevate flavours — and just like salt, it's an important part of balancing a dish. If your food tastes flat but you've already salted it, try adding a splash of wine, vinegar, or lemon to amp it up.
