We talk a lot about the school
and the food.
But here’s a little bit more
about the person behind it all.
The one who actually does the cooking.
And the teaching.
What would your ‘but’ be?

Ten years of teaching in this kitchen and we’ve never once met a bad cook. We’ve met people who are scared of salt. People who decide a chicken is “probably done” on ‘ten more minutes at 180 should do it.’ People who bought the tweezers before they learned to hold the knife. Or the expensive BBQ before learning heat control.
The fix is salt, tasted and trusted. A thermometer, because “done” is a number, different for each ingredient. And the unglamorous, deeply satisfying graft of doing the basics until your hands know them better than your head does.
That’s it. That’s the whole secret. Everything else is garnish.
Save this for your next cook and confess in the comments: which one’s you? We promise not to judge 👇
