Two books that teach you to think
like a cook and understand how a recipe it put together.

4. The Whole Fish — Josh Niland
Just a beautiful book, great imagery and inspiration

Honest, brilliant and genuinely useful

Ten years of teaching in this kitchen and we’ve never once met a bad cook. We’ve met people who are scared of salt. People who decide a chicken is “probably done” on ‘ten more minutes at 180 should do it.’ People who bought the tweezers before they learned to hold the knife. Or the expensive BBQ before learning heat control.

The fix is salt, tasted and trusted. A thermometer, because “done” is a number, different for each ingredient. And the unglamorous, deeply satisfying graft of doing the basics until your hands know them better than your head does.

That’s it. That’s the whole secret. Everything else is garnish.
