Red Sweet Potato Curry

Nutrition per serving:
459 kcal 18g Fat 62g Carbs 13g Prot

2 tsp. coconut oil
1 white onion, diced
2 cloves garlic, minced
4 tbsp. Thai red curry paste
2 sweet potatoes, peeled and diced
14oz. (400g) can chopped tomatoes
1 cup (240ml) vegetable stock
ΒΌ cup (65g) smooth natural peanut butter
Β½ cup (120ml) canned coconut milk, light
juice of 1 lime
3 cups (480g) cooked white rice
ΒΌ cup (30g) peanuts, chopped
handful coriander, chopped

Heat the coconut oil over medium heat in large pan. Add the onion and cook for around 5 minutes until soft.

Next add the garlic and red curry paste and stir well. Add the sweet potatoes, chopped tomatoes, vegetable broth, and season with salt and pepper. Bring to a boil, then reduce the heat to medium-low and simmer for 30 to 35 minutes until the sweet potatoes are tender.

In a small bowl, whisk together the peanut butter and coconut milk. Pour into the pan and stir well to combine.

Remove from the heat, squeeze in lime juice, mix well and serve with the cooked rice. Garnish with the chopped peanuts and coriander.

Vegetarian Week: Potato & Sundried Tomato Salad

Nutrition per serving:
161 kcal 9g Fats 17g Carbs 4g Protein

lb. (450g) baby potatoes
Β½ cup (90g) green olives, halved
Β½ cup (70g) sundried tomatoes, drained, roughly chopped
2 tbsp. capers, drained
handful chives, chopped
1 tbsp. oil from sundried tomatoes
1 tbsp. wholegrain mustard
1 tbsp. apple cider vinegar

Place the potatoes in a pot of salted water and bring to a boil, lower the heat and simme for about 20 minutes. Once cooked, drain and rinse in cold water. Once slightly cooled, peel, halve and place them in a bowl.

Add in the olives, sundried tomatoes, capers, and chives. Next, mix the oil for the tomatoes, mustard, and apple cider vinegar and drizzle over the salad. Season to taste with salt and pepper, mix well and serve.

Another Delicious Recipe For You

Slow Cooker Chicken Fajita πŸ˜‹πŸ˜‹

183 Cal 28g Prot 12g Carb 3g Fat

What You Need:
2 lb. (900g) chicken breasts
4 bell peppers, sliced
1 red onion, sliced
2 tbsp. honey
1 tbsp. olive oil
1 lime, juice
1 tbsp. chili powder
1 tbsp. cumin
1 tbsp. paprika
1 tsp. salt
1 tsp. onion powder
1 tsp. garlic powder
1 cup chopped tomatoes

Place half of the sliced peppers and onion in the slow cooker. Layer the chicken and coat with honey, olive oil, lime juice, all the seasonings and chopped tomatoes.

Lastly, add the remaining peppers and onions and cook for 4 hours on high.

Remove the chicken and shred it with a fork, then return it in in the slow-cooker. Mix well and cook for another 10 mins. on low.

Assemble fajitas and enjoy.

Suggested serving (not included in nutrition info) :
tortillas, cream, guacamole, corianda

Tuna Brocolli Salad

For the salad:
2 big handfuls salad leaves
3 radishes, sliced
Β½ cup (120g) tuna in water, drained
2 slices bread
100g broccoli
2 tsp. Parmesan, grated

For the dressing:
2 tbsp. olive oil
3 tbsp. of lemon juice
1 tsp. of honey
salt and pepper

Divide the salad leaves between two plates. Add the sliced radish and pieces of tuna.

Toast the bread and cut into cubes, then add to the salad.

Place the broccoli in a pot of boiling water and cook for approx. 5 minutes, then strain and add to the salad.

In a bowl, mix all the dressing ingredients and drizzle over the salad. Sprinkle with parmesan cheese and serve

Banana Breakfast Oats

What You Need

1 cup (90g) oats
2 ripe bananas, mashed
2 tbsp. peanut butter
favorite nuts and seeds, to garnish
seasonal fruit, to garnish

Divide oats between two bowls and add 3 tbsp. of water into each bowl.

Add in one mashed up banana into each bowl and mix well to combine. Set aside for 10 minutes for the oats to soften.

Drizzle the oats with peanut butter and serve with the nuts and seeds and chopped fruit.

Protein BlueBerry Pancakes

257 Cal 36g Prot 18g Carbs 5g Fat

What You Need:

ΒΌ cup liquid egg whites (around 4 eggs)
1 scoop (25g) of vanilla whey powder
Β½ banana, mashed
almond milk, if needed
ΒΌ cup (25g) fresh or frozen blueberries
Β½ tsp. coconut oil

Whisk together the egg whites and protein powder.

Stir in the mashed banana and add the blueberries. If the pancake mixture seems too thick, add a splash of almond milk to thin it.

Heat the coconut oil in a pan to low-medium. Pour in the pancake mixture and cook until little bubbles form (about 5 minutes).

Make sure the pancake has set enough before you try flipping it, then flip over. Cook the pancake for another 2-3 minutes.

You can also make 3 small pancakes instead of 1 large.

Serve with your favourite toppings.

Summer Smoothie Protein Bowl

What You Need

2 medium peaches, chopped, frozen
1 medium banana, sliced, frozen
ΒΎ cup (190g) natural yoghurt
Β½ cup (125ml) coconut water
1 scoop (25g) vanilla protein powder

Optional toppings:
fresh berries
Goji berries
walnuts
chia seeds
muesli

Place all ingredients in a high-speed blender and blitz until smooth.

Divide between 2 bowls, add your favourite toppings and serve straight away.

NOTE:
Toppings are not included in macronutrient information, or shopping list.
