Homemade pizza today with garlic, onion, jalapeΓ±os, bird eye chillies and pepperoni πŸ₯΅πŸ₯°

The base recipe was from the PizzaExpress book 'From Italy with Love' and the toppings were random things that we like πŸ˜‚πŸ’•

Kevin picked up a bug at an event last weekend so I made him eat 'bland' food for 2 days! (I'm so mean, I know πŸ˜‚). Yesterday he was feeling more settled so I made a super mild potato and coconut curry πŸ₯”πŸ₯₯

I used a small onion, garlic and ginger paste, turmeric, mild curry powder and a vegetable stock cube to add flavour. Then potatoes, peas... some leftover mushrooms and broccoli all cooked in tinned coconut milk πŸ˜‹ We did miss the extra chilli we would normally have but it was delicious and easy on the tummy! πŸ₯°

Kevin is now almost back to his usual self and washing up duties will resume shortly! πŸ˜‚πŸ˜‚πŸ’•

A lovely morning with the folks at Green Health Thames Valley again today. We had an outdoor cooking session with everyone getting involved preparing the veg and sauce for sweet and sour vegetables.

It was so nice to sit in the shade with a little breeze and listen to people chatting and enjoying the company while they prepared lunch for each other πŸ’•

We had sweet and sour vegetables with noodles and some prawn crackers. Then coconut chia pudding with fruits and seeds. We worked out that we had approximately 25 plant points towards our 30 plants a week πŸ₯³

Oh my goodness... I don't really have a sweet tooth and to be honest cookies wouldn't be top of my food list... BUT... I was tempted to make these Mexican hot chocolate cookies 🌢 and they are all MINE!! πŸ˜‹πŸ˜‚πŸ˜‚

Cayenne pepper🌢 throughout and a sugary, cayenne coating... these are seriously moreish in my opinion πŸ₯°πŸŒΆ I did make a couple of changes as I didn't have chocolate chips or marshmallows πŸ€·πŸ»β€β™€οΈ I used a chopped up dark chocolate bar and some chopped pecans but I don't think these are going to make it to Monday!! πŸ˜‚πŸŒΆ

How Tasty's Japanese Hokkaido Milk Bread recipe is still the one I go to πŸ’• Preparation for milk bread is a little different from making a standard loaf, but soooo worth it πŸ˜‹πŸ₯° Soft, fluffy, chewy and incredibly moreish πŸ˜‹

** Kevin has had to go out this evening but has begged me not to eat it all before he gets home later!!! Hmmmm I just can't make that kind of promise πŸ€”πŸ€£πŸ€£πŸ€£

I should have used my higher sided loaf tin but I don't mind if it's not pretty... it's not going to last long enough to notice 🀣

We had a fun morning cooking up lunch at Green Health Thames Valley last week... but oh my goodness it was hot! πŸ₯΅ The folks at GHTV got involved in preparing and cooking for each other and everyone served up their own dessert. Truly a team effort and sooooo delicious πŸ˜‹ πŸ’•

On the menu was Bombay inspired potatoes, raita, seeded roti style flatbreads, microwave brown rice and a yogurt based 'Eaton mess'. If we count all the veg, fruit herbs and spices we were looking at over 15 different 'plants' towards our 30 plants a week πŸ˜‹ (I will do a proper count for next time).

Potatoes and mint were from the GHTV garden πŸ˜‹

Highlights included one person who used to cook a lot but who is now unable to cook... having a go at chopping veg for the first time in a very long time and doing a brilliant job πŸ‘ πŸ’•

Well done to everyone πŸ₯° Looking forward to next time πŸ½πŸ’•

I had some puff pastry in the freezer when I received some recipe ideas from The Happy Foodie and was inspired by the Courgette and Goat’s Cheese Puff Pastry Tart from the book Puff It Up by πŸ˜‹

I divided the pastry in half and made two tarts. A couple of small tweaks... I used a firmer goat’s cheese (not soft), a small marrow from our garden and toasted the pistachios... absolutely delicious πŸ˜‹ and a definite will do it again recipe πŸ˜‹ πŸ’•

Added salad and new potatoes (boiled and fried in butter, garlic and seasoning) from our garden (thanks to Kevin the gardener πŸ˜†πŸ’•)... a lovely summer supper πŸ₯°πŸ’•

Recipe finalising... it's a tough job but I'll do it! πŸ˜‹πŸ˜…

When I put together recipes for Green Health Thames Valley I have a number of things to bear in mind...

1. Is it delicious πŸ˜‹
2. Does it move everyone towards eating 30 different plants a week
3. Could someone who might not be confident in the kitchen attempt to make it
4. Are the ingredients and cooking methods accessible and budget friendly
5. Is it scalable (for one person or a family)
6. Can it be adapted for different tastes

Hob cooked Bombay inspired potatoes with mixed seeds roti has 10-12+ different plant ingredients... now just trying to decide if I should go back for seconds πŸ˜‹πŸ€£

Back in the kitchen this week after a couple of weeks off πŸ˜ƒ Recipe planning and testing for the folks at Green Health Thames Valley πŸ’š

Last year I gave monthly cookery demonstrations to showcase recipes using fruits and vegetables from the garden plus other ingredients to encourage us to eat 30 plants a week.

This next series of workshops will see the ladies and gents preparing the food themselves... plus cooking and eating together πŸ˜‹πŸ’•

The potatoes in the garden are ready to harvest so our first recipe will be fresh from the ground! Looking forward to sharing their progress with you here πŸ₯°

Yesterday morning, more of our junior chefs prepared baked sweet and sour vegetables. The children chose which vegetables they wanted to include and in what quantities πŸ’•

We made another fruit salad with lychees, mandarins, bananas, apples, and watermelon πŸ˜‹ We also paid another visit to the garden and pinched more of Kevin's fresh peas straight from the pod πŸ˜‹πŸ˜†

That was the last of the baking classes we will be running from our home, and we will be reclaiming back our lounge πŸ˜†

I will be running cookery sessions for Green Health Thames Valley at their venue and hope to bring you updates on how they get on πŸ’•

Ps: We know that the Ancient Chinese didn't have all the ingredients we used today, but we were grateful for the inspiration again.
