With all the extra time we have at home at the moment, I thought I’d resurrect Herman the German friendship cake! If you’ve never heard of him, he’s like a chain letter but with cake at the end. You nurture and feed him for 10 days and at the end, you share your cake mix with friends and turn your leftover batter mix into a yummy cake! 🍰
My friends and I so far have made traditional apple, raisin and cinnamon, banana and white chocolate with marshmallows, apple and chocolate and a lemon drizzle... If you are interested in starting one of your own, I’ll post the starter recipe x

Yesterday’s cookery class featured lovely fluffy pancakes! How do you like yours? Mine is with Greek yoghurt, maple syrup, strawberries, raisins and mixed nuts and seeds.
The left over mix I froze in small portions in preparation for weaning my little one!

I really enjoyed my first virtual cookery class today. All the attendees and their mini chefs did a great job. We made flat breads and I demonstrated how to make a delicious spiced carrot dip.
This was a closed meeting for a company so wasn’t open to everyone but it’s something I will be doing again...

Apricot Oaty Triangles-This recipe has been adapted from one of Mary Berry’s for Figgy Oat Squares. I substituted the figs with apricots(+ extra 50g) and as I only had dark muscavado sugar I used half caster sugar.
The health benefits of eating dried apricots are endless but to illustrate; they contain fibre to aid digestion, calcium to improve your bones, magnesium to calm anxiety and relieve stress, increase energy levels, improve your immune system as well as being low in calories! What other excuse do you need to make these oaty delights? They are a bit naughty though!

If you know of a patch of wild garlic within walking distance of your home then you could make this delicious wild garlic salt... it’s yummy on flat breads and last night we had it on our steak!

WILD GARLIC SALT

Wild garlic season is here. We have started picking it from woods on the farm. Glossy, juicy and pungent, with a milder flavour than the dried bulbs – wild garlic leaves are one of the joys of spring. The season is short, so enjoy while you can.

One way of enjoying the season for longer is by preserving it. Head chef Lewis Glanvill has been making wild garlic salt in the The Riverford Field Kitchen. It’s a great way to capture the fresh garlicky flavour of this early spring delicacy, and once made, it can be stored for several months. In the field kitchen we use this salt as a finishing garnish on a whole host of dishes; from dips and freshly baked breads, to our platters of roasted seasonal veg.

To make this at home, you’ll need:
800g of sea salt and 100g of chopped wild garlic.

First of all you need to make a salty paste. To do this add 100g of sea salt and 100g of chopped garlic to a blender and briefly blend to form a thick mixture. Next, mix this paste through 700g of sea salt until all of the salt has turned a vibrant green. Spread the mixture out on a baking tray and leave somewhere to dry overnight. And that’s it – simple. Put it in a jar and store in a cool, dry place, ready to be enjoyed.

I was planning on taking a break during my maternity but thought I could be useful and post the odd recipe for you to try with or without kids!
This is a Jamie Oliver recipe that I love called one cup pancakes. So easy and so many variations. You can even put extra fruit into your mix like grated apple, mashed banana or dried fruits... make them your own and send me any pics if you do make them! Sorry about the poor picture quality. 😬
