You would have been proud of me at the weekend - 50 naan breads made to go with homemade chicken korma for a buffet I catered! Quite pleased with myself from the nice comments I had about them too! All made on my bakestone with a pan lid!
Pizza was a massive hit today.
These two throughly enjoyed their pizza class this morning.
We had such a lovely time today with Rachael who was very patient and lovely with the children. We made beautiful pizza and had a lovely time in a lovely setting. Diolch.

Eat, drink, chat, laugh & treat yourself to a full day of baking breads from around the world in my lovely new bakery school £125 per person.

Classes are held for a maximum of 8 bakers allowing plenty of opportunity for discussion, hands on experience and questions. The day starts in the kitchen at 9.30am – with views up over the vineyard to the peak of the Sugarloaf Mountain. We’ll drink coffee and discuss the science that transforms a few simple ingredients into beautiful breads.

“Cheats Sourdough” uses the same principles as sourdough (long fermentation times, stretch and folds instead of kneading, shaping and baking in a Dutch oven) but with the reliability and predictability of a tiny amount of commercial yeast.

The video is not exciting and I doubt you’ll get to the end without nodding off 😂 but it does show how to bake a very fine loaf 😃

So lovely to meet Diane and her granddaughter Karen in yesterday’s sourdough class (a treat from granddad!)

A Tartine style sourdough loaf and “semi-sourdough” to make ficelle (skinny baguettes) and stecca (like focaccia only it’s Italian for “stick”).

Semi sourdough gives you that lovely hint of sour, an open crumb, crackling crust and longer shelf life, whilst a tiny amount of yeast (from a pot) gives a nice reliable predictable rise. The perfect combination for a busy life 😃

Yoga & Baking Class
Sunday 28th February 2021
10am - 12.30pm

STEP 1
I’ll show you how to make the dough and shape the snowflake / mandala loaf (30-40 minutes)

STEP 2
Whilst the dough rises Emma will run a one hour Yin Yoga session. Apparently this is equally as good for tight muscles and creaky joints as it is for yoga enthusiasts.

STEP 3
Glaze the loaf and load it in the oven, make a coffee, bathroom stop etc.

STEP 4
Whilst the loaf bakes, settle down for 20 minutes of journaling - having a proper think about the good stuff in life.

STEP 5
Fill the house with the aroma of freshly baked bread and savour the flavour of the cinnamon and ginger baked into the soft, warm, butteriness...

Naomi suggested layering them with cinnamon and sugar in a heavily buttered loaf tin. I think it tasted even better than the croissant!!!

Hot chocolate and a Nordic Baking Class are a great place to start. The first one is on Tuesday 20th October... and I might try and squeeze another one in before Christmas because these buns are hum scrum!

The bakery school is well ventilated (high ceilings and open windows / doors) and class numbers are limited to 4 - 6 rather than the usual 8 - 10.

From this chart, even with prolonged exposure, the risks are low (green) with a face mask 😅

At last! The kitchen at the new bakery school in town is open. All laid up for the Italian Breads Class last Friday.
