Macaroons are iconic in France ! The famous Pastry Chef Pierre Hermé 👨‍🍳is recognized as the King of Macaroons , and other Pastry Chefs are excellent too. I took some macaroons courses a long time ago, and the best course was with Christophe Roussel🙏(.roussel.la baule) who shared with me some tips to improve my technique.
My fillings are inspired by my mother, especially the lemon one 🍋. Caramel au beurre salé, Raspberries, and the Chocolate ones are also very popular !

Do not ask how many Macaroons I baked with my clients ! Thousands and thousands , and it is a gift for me to teach and share with my guests .
After the course ( in English but can be in French 😉), a box of around Twenty Macaroons is given , and the recipes are sent . After a course and with my tips , you will be able to recreate 💯the recipe for your family & friends.

My course take place in a dedicated and cosy apartment in Paris, each week in the afternoon

Autumn Break🛶 Venezia 🛶 with my wife and daughters ! Extremely inspiring for its history, art scene and of course… Italian food! 👨🏼‍🍳 We discovered lots of delicious restaurants thanks to the top selection of my daughter !✨

Happy to prepare for my friends a receipe from my favorite cookbook this summer (Et si on devenait pescétarien ?) .
Several fresh fishes 🐟🐟🐟from the Island . Seasonal Vegetables 🥕🧅🫑🌶, and coucous . Delightful!
And for lunch the day after , you can serve them cold with a home made Mayonnaise (and homemade Foccacia 🤩 instead of bread )

After a very intensive cooking class activity during these last months and weeks in Paris … I will take a break with my family and best friends in August 🌴

Such a pleasure to share again my passion of cooking with my guests from all over the world , back in Paris . Thanks to all of you , for sharing the joy being back together 🥂 , choosing our fresh products together on the special open markets of Paris , cooking and having lunch .It is for me an incredible experience - cooking together but much than that , often very emotional due to our discussions .

Thank you to our French market producers , who are key bringing us the very best products , that is so precious .

🍋 A lemon tart is a french classic dessert I particularly love to cook. When I teach this pastry in my cooking classes, I use my mother's lemon curd recipe.
💛 This remarkable presentation is inspired by the talented Chef Michalak. The green lemon zests add a modern touch to this traditional dessert.
The result is creamy and tasty.
👨‍🍳 Gourmet tip : Be sure to choose a quality butter to get this lemon tart even more delicious.

Lunch idea ! 🍅❤☀️ We need summer vibes these days, so I decided to bake a slow-roast tomato tarte tatin. Cherry tomatoes baked with balsamic vinegar, honey and thyme for even more flavor on the plate. It is a perfect match with the butter pastry crust. Delicious !

I love discovering japanese food. After my trip to Japan 🇯🇵 in 2015, I learned to play with ingredients I never used before. One of my favorite (and simple) recipe is a filet of mackerel 🐟 poached with a miso sauce, served with daikon (radish) and gohan 🍚 (rice). いただきます ! Itadakimasu ! Bon appétit ! 🥢
