Learning wine management... in the field. 🍇

As part of the Bachelor’s degree in Viticulture and Enology program, during a full day of field visits the students immersed themselves in the reality of the wine industry, from a classified growth to a vine nursery.

At , in Saint-Émilion, the student understood the production process and constraints of a grand cru classé on the right bank. Quality requirements, organization, team management, decision-making... Operational management takes on its full meaning here.

The second visit was to the Amblevert vine nursery.
From selection to grafting, technical and legal constraints to the length of the production cycle and cost structure: a complete immersion in the production of a vine plant, a strategic link in the industry.
This day of visits marked the end of the Bachelor program in Bordeaux before continuing for 15 days in Montpellier and 15 days in Dijon, then leaving for a 3-month immersion internship.

The objective of this part of the Bachelor program?
To expose students to the reality of the field and give them concrete keys to operational management, complementing their internship experiences.

Because training in viticulture and oenology is not limited to classroom learning: it is experienced through contact with professionals.

Want to join a program that is connected to the major players in the industry and rooted in the reality of the sector? Applications are now open.

As part of the module “Technological approach: from the grape to the bottle,” students took part in an educational outing dedicated to the role of oak wood in the final style of wines. 🍷

The morning began with a visit to the cooperage, where students learned about all the stages involved in making a barrel, from the raw wood—the oak trunk—to the finished barrel ready for use. The visit highlighted several essential quality parameters, such as the fineness of the wood grain and the type of toasting applied.

The outing continued at , with a tasting session that allowed students to observe the influence of different types of barrels on the style and aromatic profile of wines. A lunch, generously provided by the teams, concluded this day of exchange and sharing.

It was an immersive and enriching experience, combining a technological approach with sensory application, bringing students closer to the realities of the field.

📍 Professional visit to Castel Blanquefort

As part of the Enological materials module, our international students studying for a Bachelor's degree in Viticulture and Enology recently discovered how a large-scale production facility producing over 100 million bottles per year operates.

Accompanied by Thomas Boutin, the site's quality manager, they explored the diversity of packaging, from 25cl plastic bottles for airlines to 5L bag-in-box for French supermarkets.

Tangential filtration, electrodialysis, pasteurization... these are just some of the technical processes discovered during this visit, which was rich in discussion and learning and perfectly complemented their theoretical knowledge.

This practical and enriching experience reinforces the Bachelor's program and prepares our students to fully understand the realities of the international wine industry. 🍷

One week on the road with Bachelor’s and Master’s students! 🍷
Last December, a study trip took place in Montpellier, where students attended the SITEVI exhibition and took part in several activities such as seminars, tastings, and winery visits. A great opportunity to discover new terroirs in the best company.

Professional immersion at 🍇

For two and a half months, students in the Master of Science in Vineyard and Winery Management program conducted their professional audit project at Château Guibeau in Puisseguin, in the heart of the Saint-Émilion appellation.

The goal was to apply their theoretical knowledge to real-world situations, drawing on a combination of viticulture, oenology, and sensory analysis.
The students analyzed the technical data provided by the estate (viticultural and oenological), evaluated the quality of the wines during several tasting sessions, and then formulated their concrete recommendations for improving the estate's practices. 🍷📊

At the end of the project, they presented their conclusions to the estate's owners—Justine, a former student of the program, and her parents Éric and Brigitte—in a spirit of professional exchange. It was a true consulting role for these future players in the wine industry.

This was a valuable experience for learning in a real-world setting, in close collaboration with committed players in the local wine industry.
