Our students took on the Citrus Verveine dessert 🍋 exam a challenge focused on precision, creativity, and visual harmony. Each student presented their own unique plating, showcasing technique and personal style.

Chef Pol then provided individualized feedback, guiding them on balance, texture, proportions, and the fine details that elevate a dessert from great to exceptional.

Proud of our students for their hard work and artistic spirit. The future of pastry is in good hands 👏

🥩 Beef Tartare Recipe 🇫🇷

A true French classic, fresh, flavorful, and surprisingly simple to prepare. Perfect with crispy Pommes Pont Neuf for the ultimate bistro experience.

Ingredients
200 g ground beef · 10 g Dijon mustard · 20 g capers · 10 g pickles (cornichons) · 1 shallot · 2 g parsley · 1 egg yolk · Tabasco · Worcestershire sauce · Ketchup · Olive oil · Salt & pepper

Method
✨ Whisk mustard + egg yolk, then emulsify with olive oil.
✨ Add capers, pickles, shallot, parsley + season with ketchup, Tabasco & Worcestershire sauce.
✨ Mix in the beef, adjust seasoning, and serve with golden fries.

At Gastronomicom, every month brings new recipes, greater challenges, and exciting opportunities for our students to refine their techniques and gain confidence in the kitchen. 👨‍🍳✨

Two weeks ago, during their very first Fish Week, our students, guided by Chef Fabrice, learned how to clean, prepare, and cook different types of fish, craft elegant sides, and elevate their plating skills.

Here are just a few of the dishes they created:
🐟 Cod fillet with bouillabaisse jus, creamy and crispy bulgur
🐠 Sea bream fillet with honey-glazed celery ravioli, Parmesan aïgo boulido, and crispy celery
🧂 Marbled po***ck with paprika, leek fondue, pommes boulangères, and red pepper sauce
🦪 Roasted scallops with walnut crust and Jerusalem artichoke infused with truffle oil

Each month of culinary training follows a dynamic, theme-based structure:
🍽 Week 1 – Cold starters
🔥 Week 2 – Hot starters
🐟 Week 3 – Fish with sauce and garnish
🥩 Week 4 – Meat with sauce and garnish

From mastering filleting techniques to creating refined French plates, our students continue to push their culinary limits, one week at a time! 🇫🇷✨

At the start of each new session, we organize several orientation meetings for students enrolled in our 7- or 12-month programs that include an internship.
