In this session, we will see the introduction part of how food factory determine the shelf life of their product by using a challange test.

What is Growth tests/challenge tests?

It is a microbiological test that measures the growth of microorganisms in artificially contaminated foods stored under predictable conditions at the manufacturer to analyse the potential growth of microganisms. A microbiological growth test should consider the predictable conditions likely to occur throughout the cold chain, including storage conditions between production and consumption. Those preditectable conditions might be intrinsic or extrinsic factors. The testing period begins on the day of contamination and ends at the end of the shelf life.

In the next section, i will select one microganism which has a good relation with fish and fish products. And then, we will see how to analyse the test. It's a simple test that evey student could practice with out any difficulties.

Dilution preparation
