La gastronomía es uno de los motores del turismo de muchas poblaciones de Cádiz. Rota no es una excepción y, además, ofrece a sus visitantes la posibilidad de descubrir un trozo de su historia a través de la mayetería. Se conoce por mayeto roteño al campesino y mayetería su forma de trabajar el campo. Un símbolo de la agricultura de una ciudad que muestra a los turistas elementos tradicionales para valorar en su justa medida la calidad de los productos que pone sobre la mesa.
Los términos mayeto y mayetría vienen de la palabra mayo, precisamente el mes en el que el campesino roteño comenzaba la recolecta de la hortaliza. Tenía de especial que en Rota se hacía unos 20 días antes que las poblaciones colindantes. Allí maduraba antes por varias razones que es el rincón de la provincia que recibe más horas de sol al año; por el agua, porque cuenta con pozos de agua dulce pese a estar pegada a la playa y eso permitía un buen regadío. También es fundamental la calidad de la tierra, de sílice, muy permeable, que aunque la primera capa está muy baja siempre permite frescura y eso faciltaba la recolección temprana de las hortalizas.
Las más importante en Rota son los tomates, los pimientos y las calabazas, de muy buena calidad y de una recogida más temprana. Ahora puede parecer un detalle menor porque en el supermercado hay todas las hortalizas con independencia de la época del año, aunque no saben igual. En aquel momento sólo las había en su época del año correspondiente y, cuando llegaba el mayeto roteño con los primeros tomates o calabazas, era el gran dominador en el mercado.
Orígenes
La mayetería sigue siendo importante a día de hoy en Rota, pero ya no es la principal fuente de ingresos, que lo ha sido junto con la pesca durante muchos años. Hay que hacer hincapié en que se conoce el mayeto desde el siglo XI. Cuando llegan los árabes, forjan un cinturón ortofrutícola rodeando la costa y son los primeros que traen los melones y sandías. A partir de ahí se fomenta la agricultura en Rota.
El centro de mayetería
En el centro de mayetería de Rota se pueden ver las chozas donde vivían los mayetos, las primitivas, que eran enteras de junco. Las más cercanas en el tiempo son las de techumbre de junco y paredes de material. También hay animales y huertos, además de 21 huertos de ocio, donde las personas mayores de Rota que lo soliciten, ya jubilados y empadronados, siguen fomentando la mayetería.
Visitas
En verano el centro ofrece visitas todas las semanas y el resto del año, bajo petición. Son muchos los colegios, las asociaciones y los turistas que acuden, con una importante presencia de americanos que proceden de la Base Naval. Las chozas están cerradas, pero se abren para los visitantes durante las visitas guiadas. Durante los recorridos de los viernes estivales existe la posibilidad de hacer la visita con una degustación de arranque roteño, el plato típico de la huerta. Al final de la visita se da una tacita y una bebida por persona, que son las que hacen en verano. Una vez pasado el verano, se forma un grupo con las personas interesadas y la consumición ya va en función de lo que se demande.

Visits
In summer the center offers visits every week and the rest of the year, on request.
