Old Cheese… What Makes Its Flavor Develop Over Time? 👀

When we say “old cheese,” the first thing that might come to mind is simply cheese that has been left for a long time.

But it’s not quite that simple.

Time is part of the preparation process itself.

The cheese starts with milk and then goes through stages of preparation, salting, and storage. Over time, maturation and fermentation processes change its flavor and texture.

That’s why mish isn’t simply “old cheese” in the literal sense…

It is a traditional way of preparing and preserving dairy products, passed down from one generation to another.

But why is it called “mish” in the first place?

The name itself isn’t simply a modern popular name.

Arabic dictionaries record “mish” as a term for cheese aged in milk and salt, then left in a jar for a long period until it matures and becomes a food accompaniment.

So even the name of this food has a place in the Arabic language.

And what’s fascinating is that the small details in its preparation are what make the difference:

The amount of salt,
the way the cheese is stored,
the type of container,
and the amount of time it is left to mature…

All of these can affect the final result.

Even the container itself was part of the story.

In the documented traditional method, the cheese was stored in a balas—a large, two-handled pottery vessel—along with ingredients such as whey and spices, and left for a period of time to mature.

So when we see an old pottery vessel containing old cheese, we’re not simply looking at a container…

We’re looking at part of the way the food itself was prepared and preserved.

And that’s why, when we eat mish today, we’re not simply tasting a traditional food.

We are tasting knowledge passed down from one generation to another.

And that is exactly what makes food part of intangible cultural heritage:

It’s not just the recipe…

It’s the knowledge, skills, preparation methods, and experience passed between people.

Perhaps that’s why, when we see a simple food like mish, we should ask:

How much can a single dish on our table tell us about the lives of people in the past? 👀

And what do you call it: “mish” or “old cheese”?
And what’s your favorite thing to eat it with?

Why Is the Discovery of Rock-Cut Tombs in the Delta So Rare? 👀

When we imagine an ancient Egyptian tomb carved into the rock, the first places that usually come to mind are Upper Egypt…

Luxor, Aswan, or areas surrounded by mountains and exposed rock.

But the Delta?

That’s a different story.

At Tell el-Yahudiya in Qalyubia, an Egyptian archaeological mission recently uncovered several rock-cut tombs with different architectural designs.

And what makes the discovery particularly interesting isn’t just the age of the tombs…

It’s their location.

The Delta has a very different geological landscape, with extensive areas of clay-rich soil.

So, quite simply:

Where is the rock to carve a tomb into?

This is one of the reasons why rock-cut tombs are relatively uncommon in the Delta compared with parts of Egypt where mountainous landscapes provided extensive areas of suitable rock.

But at Tell el-Yahudiya, archaeologists found two different tomb designs.

The first type begins with a staircase leading down to a chamber, with burial niches inside.

The second consists of a rectangular shaft leading to two burial chambers.

So even within the same area, different approaches to tomb construction were being used.

And what makes the discovery even more interesting is that these tombs were not associated with just one period.

Archaeological evidence indicates that they date back to the Late New Kingdom and continued to be used into the Late Period.

In other words, the site witnessed funerary activity across successive historical periods.

But the story doesn’t end there…

Above the rock-cut tombs, excavations also revealed the remains of a Roman military camp.

This means that the same location was reused centuries later, during a completely different historical period.

Tombs underground…

And a Roman military camp above them.

One place, but each layer tells a different chapter of its history.

And perhaps that is one of the most important lessons from this discovery:

When we find a tomb, we don’t have to ask only:

Who was buried here?

We can also ask:

Why was it built here, and why was it designed this way?

Because sometimes, the landscape itself influences the kind of architecture people can create.

And at Tell el-Yahudiya, the presence of suitable rock in the Delta is precisely what makes these tombs such an unusual discovery.

Would you have imagined that the Delta could hide rock-cut tombs? 👀

If This Picture Had a Voice… What Would It Sing? 👀

Look at these fishermen pulling the net together.

If this moment had a voice…
what do you think it would sing?

The answer isn’t just an ordinary song…

Some fishermen’s songs were closely connected to the work itself, especially while pulling fishing nets. Collective songs and chants were part of the working atmosphere, helping coordinate movement and make the effort less demanding.

One example associated with this type of work is:

“Hela Hela… Leave It to God.”

It is also sometimes heard in the form:

“Hela Hela… Send Blessings upon the Prophet.”

What makes this even more interesting is that the song wasn’t something separate from everyday life…

It was part of the working moment itself.

A repeated voice,
a group working together,
and a movement that required everyone to move in rhythm.

And this is one of the beautiful things about intangible cultural heritage:

Heritage isn’t always something we see in a museum…

Sometimes it is a sound,
a word,
or a song repeated hundreds of times as people went about their everyday lives and work.

Perhaps that’s why, when we look at an old photograph like this, we shouldn’t only ask:

“What were they doing?”

We can also ask:

“What were they saying while they were doing it?”

So if this picture had a voice…
what do you think you would hear? 👀

An Egyptian City Disappeared… and a 3,000-Year-Old Stone May Help Us Find It 👀

Imagine an ancient Egyptian city whose name survived in texts for thousands of years…

But its exact location?

We still don’t know for certain.

That may be starting to change with new discoveries at Tell Abu Seify, in the eastern Delta.

During the latest excavation season, the Egyptian archaeological mission discovered a massive sandstone lintel dating to the reign of King Ramesses II.

But the importance of the stone isn’t its size…

It’s what is written on it.

The inscription mentions work connected to a statue of the god Horus, Lord of the City of Mashen.

And that raises an intriguing question:

Could Tell Abu Seify be the location of the ancient city of Mashen?

Mashen was associated with Egypt’s eastern region and the Way of Horus, one of the most important military routes connecting Egypt with its eastern frontier.

And the lintel isn’t the only clue.

Excavations have also revealed the remains of a temple, a sacred precinct, storage and service rooms, stone-paved roads, and a massive mudbrick wall surrounding the sacred area.

And what makes the story even more fascinating?

The site itself lived more than one life.

The site continued to develop through different periods, with the temple reaching an important stage during the Ptolemaic period. Later, parts of the area were reused as a military camp during the Roman period.

Eventually, part of the site was transformed into a limestone quarry, with large lime-burning kilns.

So a place that may have once been connected to an Egyptian city during the New Kingdom…

Thousands of years later became a military site, and then an industrial one.

But one question still remains:

Was Tell Abu Seify really the ancient city of Mashen?

We still can’t say that the city has been definitively identified.

The new discoveries have strengthened the hypothesis that the site may be connected to Mashen, but excavations and research are continuing in search of evidence that can confirm the site’s identity.

And perhaps that’s one of the most fascinating things about archaeology…

We don’t always discover something and say:

“We found it!”

Sometimes we find a single stone…

And it makes us ask a question that is thousands of years old:

Where was this city? 👀

🍞 **If your ancient Egyptian ancestor joined you at the dinner table… what would they recognize, and what would completely surprise them?** 😄

The truth is, many of the foods we eat in Egypt today would have been very familiar to our ancestors thousands of years ago!

If we look at **ancient Egyptian offering tables, tomb scenes, and texts**, we find foods such as:

🥖 **Bread** in many different shapes and varieties, along with wheat and barley
🧅 **Onions, garlic, and lettuce**
🫘 **Legumes**, including lentils, peas, and varieties of beans
🐟 **Fish**
🦆 **Ducks and geese**
🥩 **Beef, mutton, and goat meat**
🍇 **Grapes, figs, dates, sycamore figs, and doum fruit**
🍯 **Honey** as a sweetener
🍺 **B**r made from grains**, an important part of the ancient Egyptian diet
🍷 **W**e**, particularly among wealthier groups and as an offering

So, if you served your ancient Egyptian ancestor **bread, onions, garlic, lentils, fish, duck, dates, and honey**… they probably wouldn’t find the table strange at all! 😄

But here comes the surprise 👇

🍅 **Tomatoes**
🥔 **Potatoes**
🌶️ **Chili peppers**
🌽 **Maize**

All of these crops originated in the Americas and only reached the Old World thousands of years after the age of the pharaohs.

So your ancient Egyptian ancestor might happily recognize the bread, onions, and lentils…

But serve them **mahshi in tomato sauce or a modern plate of koshari with its spicy sauce and daqqa**, and you might get a very confused look! 😂

⚱️ One important point: **offering tables were not necessarily a literal representation of what every Egyptian ate every day.** They also symbolized abundance and ensured a continuous supply of food for the deceased in the afterlife. Everyday diets varied according to period, region, and social status.

**The Egyptian table has changed… but so much of what we still eat today reminds us that a thread connects us to our ancestors across thousands of years. 🇪🇬**
