🥙🍗🥘🥟🥞🥧🥔🍞🇺🇦
The food in Ukraine is one of our favorite aspects of visiting this fascinating country. Ukrainian cuisine is heavily influenced by the rich dark soil, known locally as chernozem, from where the ingredients are grown.Ukraine is often referred to as the “breadbasket of Europe” and the local cuisine emphasizes the importance of wheat and grain to the Ukrainian people and its often tumultuous history with it. The majority of cuisine in Ukraine descends from medieval peasant dishes based on plentiful grain resources such as rye as well as staple vegetables such as potato, cabbages, mushrooms, and beetroot. BREAKFASTWhen it comes to breakfast, you’ll find that Ukrainian people eat quite light and save their appetite for lunch and dinner. Breakfast in Ukraine is similar to a continental European breakfast. Ukrainian people eat a lot of cereals for breakfast. For example, in cities, a common breakfast will include boiled buckwheat, rice, or oats. In Western Ukraine, corn porridge is also quite popular and is commonly eaten with white cheese.LUNCHFor traditional food when you’re on the move in Ukraine, there are a variety of local fast food places serving great local fare for affordable prices. Ukrainian-style cafeterias have become very popular over the past few years. Some of the big brand names are Puzata Khata, Zdorovenki Bully, and others. These places are influenced by a Soviet cafeteria-style (but don’t worry, the food has improved massively since then!).DINNERWhen it comes to dinner you won’t forget anytime soon, we recommend the infamous Hospital Bar in Kyiv. Palata 6, as it’s locally known, is renowned for its eccentric cocktails which range from wearing a helmet on fire to being tied to a gurney whilst a sc****ly clad nurse feeds you vodka. The food is also awesome here and it’s very cheap and affordable. But book a table, as it can get extremely busy on weekends.

InstructionsStart the dough. Combine 1 egg, 2/3 cup water, and 1/2 teaspoon salt in a large bowl and whisk to combine. Gradually mix in about 2 2/3 cups flour and stir to combine into a shaggy dough.Turn the dough out onto a floured surface. Knead with the heels of your palms for about 5 minutes, until the dough is smooth, elastic, and no longer sticks to your hands, sprinkling on more flour if needed. Place the dough back in the bowl, cover loosely with a kitchen towel, and rest for 30 to 60 minutes at room temp.Meanwhile, start the filling. Place the potatoes in a pot with 1 teaspoon salt and enough water to cover by about 2 inches. Cover, bring to a boil, reduce the heat to low, and simmer with the lid ajar until the potatoes can be pierced easily with a fork, 12 to 15 minutes.Meanwhile, heat 2 tablespoons oil in a large skillet over medium heat. Finish the filling. Drain the potatoes and return to the pot. Mash until smooth. Stir in about a third of the fried onions with their oil. Cool the mixture to room temp.Roll out the dough. Cut the dough into 4 pieces. Working with 1 piece at a time (keeping the remaining dough covered with the towel), roll the dough between your palms into a 1-inch-thick log. On a floured surface, cut the log into approximately 1-inch pieces (these should resemble gnocchi). Using a rolling pin dusted with flour, roll out each piece into an approximately 3-inch circle; if the dough is sticking to the surface or rolling pin, dust it with more flour.Form the varenyky. Gather the dough into a half-moon shape around the filling and pinch the top closed, then pinch both edges closed, making sure to press out any excess air. Place the shaped varenik on a well-floured board or tray, and continue filling the rest. Make sure the varenyky are not touching – otherwise, they’ll stick together.Boil the varenyky. Bring a large pot of generously salted water to a boil. Boil the varenyky in batches – 6 to 10 at a time, depending on the size of your pot. Cook them for 2 to 3 minutes – they are done when they’ve floated to the surface, the water has returned to a simmer.

Should I write “Ukraine” or “the Ukraine”?🇺🇦
The word Украи́на ("Ukraina") contains "край", Russian for "border" or "edge". The word originally meant "the borderlands". So it was picked up in English as "the Ukraine".Since Ukraine became a separate country, they have preferred to have it be treated as a name rather than as a generic description.According to this article, "Ukraine" is becoming more common and "the Ukraine" is becoming less common since the separation.
