🔪Hitohira Togashi White #1 Mizu Honyaki Fugubiki 300mm Riisgaard Ebony Handle🔪

Something you don’t see everyday, the thin version of a Yanagiba, specially made to cut the fugu fish, but generally just great for thin and precise slices. This one as a white 1 mizu Honyaki 😍
Really spectacular work by the Togashi family!

We paired the blade with a stunning handle by in Amarra Ebony and horn ferulle.
The perfect match, both aesthetically and ballance-wise, maintaining a total weight of just 144gr!

Heavily used and sharpened by a local chef, so it was a real pleasure to bring it back to proper working condition.
The ura side could have been better, but future sharpening will definitely be much easier from now on.

Saturday in-store release part 1 🥳

To celebrate our grand opening of our new store this coming Saturday 18th of April, we are releasing three Shigefusa’s 🥳 Two Kurouchi Santokus and one 300mm kasumi Yanagiba.
A very rare and exciting opportunity for us!

All three will be available in the store from opening at 10:00 and will be available in the webshop if not sold by the end of the day.
