One Plant, Six Categories of Tea

Did you know that all true tea comes from the same remarkable plant, Camellia sinensis?

From delicate white tea to deep, earthy pu-erh, the extraordinary diversity of tea is created not by different plants, but largely by how the leaves are harvested and processed.

The six traditional categories of tea are:

Green Tea: fresh and vibrant, with oxidation prevented through heating soon after harvest.

White Tea: gently withered and dried, allowing minimal processing and subtle natural oxidation.

Yellow Tea: similar to green tea, but with an additional gentle men huang or “yellowing” stage, creating a softer, rounder character.

Oolong Tea: partially oxidised and carefully crafted, ranging from light, floral styles to deeply roasted and complex teas.

Black Tea: known as hong cha or “red tea” in China, it is fully oxidised, producing rich aromas and deeper amber-to-red liquors.

Dark Tea: hei cha, a category of post-fermented teas that develop through microbial transformation and ageing. Pu-erh is its most famous representative.

One plant. Six categories. Thousands of expressions.

That is part of the fascination of tea: through centuries of craftsmanship, the leaves of Camellia sinensis can be transformed into an astonishing spectrum of aromas, flavours, colours and textures.

If it comes from Camellia sinensis, it is tea.
If it comes from another plant, it’s a herbal infusion or tisane.

Another important difference is that true tea naturally contains caffeine, while many herbal infusions are naturally caffeine-free.

Zijuan Gongting Shou Pu’er is a distinctive ripe, or shou, Pu’er tea from Yunnan, made from the beautiful purple-leaf Zijuan cultivar.

The name Zijuan means “Purple Grace” or “Purple Beauty”, referring to the naturally purple colour of the young leaves, which are particularly rich in anthocyanins. Gongting, meaning “Imperial Court” or “Palace Grade”, refers to the very fine grade of leaves and tender buds selected for the tea.

Like other shou Pu’er, the leaves undergo wo dui, or wet-pile fermentation. During this process, carefully controlled warmth and humidity encourage microbial fermentation, transforming the tea and creating the characteristic smooth, dark and mellow profile of aged-style ripe Pu’er.

In the cup, Zijuan Gongting produces a deep reddish-brown liquor with a wonderfully soft and velvety mouthfeel. Expect rich notes of dark wood, earth and dried fruit, often accompanied by a gentle sweetness and subtle cocoa-like character.

What makes this tea particularly interesting is the combination of the unusual Zijuan purple-leaf cultivar, the refined Gongting grade and the depth of shou Pu’er fermentation—giving us a tea that is rich and complex, yet beautifully smooth and comforting.

Coddled Daughters — Zuo Si

“Coddled Daughters” was written by Zuo Si during the Western Jin dynasty, somewhere around the 3rd–4th century.
It is an affectionate and humorous portrait of his two young daughters, Wan Su and Hui Fang. He describes them as beautiful, intelligent and lively, but also delightfully mischievous—running through the garden, picking unripe fruit, playing despite the wind and rain, and impatiently waiting for their tea.

What I love about the poem is that it captures one of most memorable images showing the girls standing by the pot on the fire and blowing it because they are impatient for their tea to be ready.
It provides a rare glimpse of tea as part of ordinary family life in China many centuries ago.

The poem predates Lu Yu (733–804) by roughly four years and when he compiled his famous Cha Jing (The Classic of Tea) during the Tang dynasty, he included lines from Zuo Si’s poem in Chapter Seven, “Historical Records/Matters of Tea”.

Lu Yu used earlier literary and historical references to reflect tea’s long-established place in Chinese culture.

Zuo Si’s description was particularly valuable because it showed that tea drinking was already an established and common pleasure during the Western Jin period, long before the sophisticated tea culture of the Tang dynasty.

So, in a sense, Zuo Si gave us a beautiful optical of everyday tea drinking, while Lu Yu later preserves that snapshot as part of the historical story of Chinese tea culture.
