This soup is especially close to my heart because it’s my son’s absolute favorite soup❤️
He has multiple food allergies, so over the years I’ve learned to make a lot of our family meals from scratch and keep them simple and safe for him.
There is nothing better during fall than a big, comforting bowl of homemade chicken soup.

My trick is cooking the potatoes with garlic and bay leaf and preparing the wild rice separately, so every bite stays firm and flavorful without clouding the broth.

🛒 INGREDIENTS
The Soup Base & Aromatics:
• 1 whole organic chicken, cooked and shredded (homemade boiled chicken recommended)
• 8 cups homemade chicken broth
• 4 cups vegetable broth (I like Campbell's because it’s pre-salted)
• 2 medium carrots, peeled and shredded
• 1 sweet yellow onion, diced
• 1 Shepherd sweet red pepper, finely diced
• 2 stalks celery, diced
• 2–3 tbsp EVOO
• 3–4 cloves fresh garlic, minced/crushed
• 1 cup fresh herbs (cilantro, dill & parsley)
• Salt & black pepper to taste
Infused Potatoes:
• 4-5 medium yellow potatoes, peeled & cubed
• 2 bay leafs
• 2 cloves garlic, smashed
• Water & salt
Wild Rice:
• 1 cup wild rice (absolutely love the one from Lundberg Family Farms)
🥣 STEP-BY-STEP
1. Cook the wild rice & potatoes
Rinse the wild rice and cook separately according to package directions. It typically takes about 45 minutes. While it's cooking, boil the potatoes with bay leaf, smashed garlic and salt for 12–15 minutes, until fork-tender. Drain and set aside.
2. Build the soup
Heat EVOO in a large pot. Sauté shredded carrots, diced onion, cubed pepper and celery for 10–15 minutes, until softened and lightly golden.
Add chicken broth, vegetable broth and shredded chicken. Bring to a gentle simmer and cook for another 10 minutes.
3. Finish
Add the cooked wild rice and potatoes. Stir in the remaining fresh garlic and chopped herbs. Season with salt and pepper and let everything simmer together for 5 minutes.
