Sometimes we're late for work, school or just plain lazy and want 5 more mins in bed and 5 mins less in the kitchen. So here's an idea for a quick and easy lunch!
Ingredients:
• 1 avocado
• 1 lime or lemon
• 3-6 leaves of parsley or cilantro
• salt
• tortilla - we used Isabel Restrepo's plantain, gluten free tortilla but you can substitute it for corn or flour tortillas, an arepa or even a slice of bread!
• 2 chorizo locos
Directions:
1. Peel and mash avocados with half a lemon and a salt to taste
2. Cook 2 chorizos in your air fryer for 15 to 20 minutes in 320 to 375 degrees
3. Cut 3-6 leaves of parsley or cilanto
4. Once the chorizo is done, slice it into various slices (size depends on you)
5. Serve the avocado on top of the tortilla, place the chorizo on top and garnish with cilantro/parsley
Easy. Quick. DELICIOUS!
