Opening Chef at the Château Whistler, started the Whistler farmers market, mentor to countless Chefs across BC and Canada. restaurateur, consutlant and just one of the hardest working guys I have ever seen. I will also add, the nicest most inclusive person i have ever met. We asked Chef Casavant to help guide the family meal and he decided to help with all of the meals. .nerd talking about how how to care for and pick a great knife for yourself or as a gift for someone special in your life. He also explained the business model that he has built for his company . Everyone is paid a living wage. Everyone is part of profit sharing, and there is a unique benefits structure. He decided to put his staff first, take care of them and they in turn, take care of his business. So incredibly simple and extremely effective. These practices could be a good alternative to what is the standard norm in the hospitality industry. Solutions are everywhere, you just got to look for them.
