Epicure is returning, I AM NOT! I, along with many others are still waiting our commissions from January and honestly I cannot trust a company that lied to us by telling us all was well, didn’t tell us the CEO had stepped down and then blindsided everyone over night.

Who’s bringing back Epicure? Amelia Warren (former CEO, daughter of the founder) & the Magic Scoop brothers former Epicure business partners and debtors of the old company).

So with that said I am keeping on with A Spice Affair and The Spice Age partnership. Where I have found spectacular replacements for almost all of my old favorites!

When dinner time rolls around at the campground, everyone is tired after a day of adventuring and I want it to be just as quick and easy as breakfast!!

We do the classic hamburgers and hot dogs, but then enters Campfire Nachos!!

With the lb of taco meat I prepped and froze at home, some precut peppers & onions , as well as a bag of pre shredded cheese, this meal comes together super easy and feed a crowd of hungry campers!

I use a foil pan for easy clean up! Don’t forget the salsa, sour cream and guac!

Place it over the fire to warm everything through until the cheese is melty and delicious!

Breakfast time at the campground can be as easy as reheating a few things and cooking up some eggs! Because who wants to be doing dishes or tied to the stove when there’s so much to explore.
When you’re tent camping without hook ups, easier is better!

Pancakes 🥞 We like Bisquick gluten free pancakes for easy prep. I made the pancakes and the spread them out on a sheet pan and put them in the freezer so they would freeze individually and not become a clumpy mess. Then we use a camping toaster to reheat as many as people want in the morning.
Bacon 🥓 leave the greasy mess at home where it’s easier to clean up and precook the bacon! This trip I portioned it out once it was cooked so we had 3 paper towel wrapped bundles in a large ziploc bag, that also went into the freezer. This made it easy to pull out one bundle each morning and ensured we had enough to last us for 3 breakfasts! Those bacon greased paper towels make great fire starters for your nightly campfire.

Gluten Free Cinnamon Rolls for Father’s Day!!
I used recipe and as I was making them I thought it was going to turn out to be an epic disaster…if you know gluten free, you know baking can be a real challenge. I like recipes because they don’t have 7 different types of flour and they turn out well with one to one all purpose flour!
I’m not baker but as I was making these this morning, the yeast looked like it wasn’t bubbling, the dough didn’t pull off the bowl into the hook and the dough didn’t seem to rise when I set it aside … with all that it turned out so good!! Even if I was 10mins late for our Father’s Day outing because I was waiting on them to finish baking!
