YOUR THAI COOKING TEACHER ON VANCOUVER ISLAND
Learn authentic Thai cooking from a Thai master chef at her cooking classes in North Saanich, near Sidney, and only minutes away from Victoria. Kallayanee Glover was born in the Northeast of Thailand, in a small village without electricity or running water. Villagers lived much as they always had in this beautiful country — and their cooking reflected a long tradition of recipes handed down from generation to generation. Kallayanee learned from her mother and still cooks many of the same dishes. However, she regularly travels back to Thailand, where she learns new dishes from some of the best chefs in the country — and from enthusiastic family and friends! You'll benefit from these trips when you learn how to make little-known Thai dishes that your friends and family will love. When Kallayanee emigrated to Canada in 1990 she was determined to share her passion for Thai cooking with other enthusiasts. SPONSORED BY NORTH SAANICH PANORAMA RECREATION CENTRE

No class is a prerequisite for any other. You may select any classes you like and take them in any order you like. Match your enthusiasm for Thai cooking with your convenience. If you take five or more classes, you'll win a hand-made apron, made in Thailand. VEGETARIAN AND DESSERT CLASSES
Kallayanee has added vegetarian and dessert classes to her schedule. Don't miss your chance to try these delicious food alternatives! BOOK YOUR OWN PRIVATE COOKING CLASS
If your group or organization is looking for a very special cooking experience, you'll enjoy learning how to cook the Thai way from a native-born master chef. Students can learn up to 80 different delicious dishes in a total of 16 classes. We have hosted many private classes for groups, helping people to celebrate just about anything, from weddings to anniversaries — and for corporate team-building. To book private classes, please call Kallayanee at 250-656-1227 or contact her by email. FREE COOKING SUPPORT
Once you've taken a class, you will also benefit from free cooking support whenever you are trying to cook your new recipes on your own. Just contact Kallayanee by email or by phone, 250-656-1227. THANKS FOR ALL THE HELP FROM OUR FRIENDS
None of this could have happened without the help and support of many, many friends and acquaintances on Pender Island, Vancouver Island and Vancouver. These have included: the late Tekla Deverell, Georgina Weber, Sue and Gordie Bailey, Judy and Trevor Kelly, Michael and Marion Bankes, Angela Mangiacasale, Colin and Filu Jackson, Glenn Smith, Linda Kieran, Gerry Smith, Kimiko Ziolkowski, Uta and Kaia Bryce.
We are also grateful for the help and support of Ajan Dao, our teaching monk in northern Thailand. We learned much about meditation and Buddhism from him at his temple, Ban Dun, near Udon Thani. We believe success is related to a clear and untroubled mind and we try constantly to work in that direction.

THAI CLASSIC FAVOURITES SLIGHTLY MODIFIED
On Saturday, I hosted several ladies for a private class based largely on my all-time most popular class, Thai Classic Favourites. Actually, I thought the replacements they made to the standard menu were imaginative and excellent! Mixed Vegetables were replaced by Papaya Salad and Green Curry Chicken replaced Red Curry. In any case, it was all good, as usual! As for the ladies, organizer Kirsten Roden wrote: “We enjoyed ourselves so much. The Thai Food was amazing. We all had a chance to get involved in the cooking while still relaxing and enjoying the food.
Thank you again!”

THAI SEAFOOD FESTIVAL IN NORTH SAANICH
That’s right, we hosted one of my favourite classes, “Thai Seafood Festival,” at my home last Sunday. It was not quite Thailand, perhaps, but it was a wonderful class, with lots of enthusiasm and fun for all. On the menu were: Thai Red Hot Chicken Wings, Hot & Spicy Soup, Tiger Prawn Curry, Asparagus Salad and Fish in Spicy Coconut Cream. Dessert was my famous Mung Bean Cake and Ice Cream. Everyone, including myself, had a wonderful time.

SENIORS LOVED GINGER BEEF AND FRIENDS
Last weekend, I hosted one of my Seniors Only classes with “Ginger Beef and Friends” on the menu. This is a wonderful selection of dishes that features the “headline” dish, Spicy Ginger Beef, made with top quality beef. Other dishes included: Bitter Melon Soup, Thai Corn Fritters, Black Cilantro Ribs, and Mixed Vegetables. For dessert, we all enjoyed an unusual taste of another culture with my Plum Torté Cake, complete with ice cream. This was unusual, as I usually serve only Thai food, but I just couldn’t resist serving it at my class, after receiving enthusiastic applause from friends and family once they had tasted it!

ROYAL CRIMSON FEAST IS BIG SUCCESS AT SENIORS CLASS
This is one one of my latest classes and, so far, it sure looks like a hit. At my Seniors Only class on Sunday, an enthusiastic group of students definitely gave me the thumbs up. Besides the signature “Royal Crimson Chicken” dish, there were a number of other wonderful dishes on the menu: Thai Salad Rolls, Hot and Sour Smooth Tiger Prawn Soup, Yellow Curry, and Mixed Vegetables with ChilLi Sauce. And, as usual after a HOT Thai dinner, a cool dish of Sticky Rice and Mango was just right for dessert! I’ll be hosting another Seniors Only class this weekend. There are still a few places left. Call me at 250-656-1227 to book.

AMAZING RECIPES DISCOVERED ALONG THE MEKONG!
Yes, it’s true, there are some delicious dishes to be found in the most remote places in the world! Even in North Saanich you’d be amazed at how many great Thai dishes can be found at Kallayanee’s Kitchen! That happens especially when I lead my students on an imaginary exploration of the mighty Mekong River, which flows through Thailand and other Southeast Asian countries. Many years ago, travelling in these regions, I learned some of the wonderful dishes to be found “Along The Mekong.” And on Saturday they were all there: Tiger Prawn Salad with Snow Peas, Leaf-Wrapped Chicken, Mekong Salad Rolls, Barbecued Pork, and Thai Chicken Noodle Soup. For dessert, Strawberries joined Mangoes with Sticky Rice. It was ALL good!
