Niagara College's Teaching Distillery has once again showcased its prowess on the international stage, clinching three medals at the 2025 U.S. Open Spirits Championship! 🏅

🧚‍♂️Gold: Spirits 101 Absinthe (Specialty Spirits) - Inspired by absinthe’s storied past—rich in myth, artistry, and intrigue—this high-proof spirit is crafted with a blend of botanicals, including wormwood, anise, and fennel, then steeped with lemon balm and butterfly pea flower for a vibrant, lasting green hue. Traditionally enjoyed with water to create the classic louche effect, it’s now often used sparingly to add complexity to cocktails.

🥃Gold: Spirits 101 Spiced Old Fashioned (Bottled Cocktails) - A ready-to-pour cocktail crafted from our Southern Hospitality spirit, infused with orange peel, cinnamon, and warming spices for a rich, balanced twist on the classic. Inspired by the success of our Festive Old Fashioned, this version highlights traditional whisky character while adding a smooth, spiced complexity—just pour over ice and enjoy.

🥞Bronze: Spirits 101 Canadian Rum (Spiced/Flavoured Rum) - dark-style Canadian rum blends cultural traditions by combining jaggery and maple syrup for a rich, characterful spirit with deep brown sugar and vanilla notes. Aged in oak and carefully blended, it delivers a bold maple aroma and complex palate—perfect for sipping or classic cocktails like a Canadian Sugar Maple Old Fashioned.

🥃Single Malt - Crafted with a blend of distiller's and smoked barley, this 2022 graduate batch highlights the transparent process of single malt production, showcasing bold grain flavors with notes of caramel, vanilla, and gentle smoke. This approachable yet balanced whisky, double-distilled and aged in a 57L cask, delivers a grain-forward experience perfect for both novice and seasoned whisky enthusiasts.

🥃Rye Whisky - Crafted with a blend of corn, barley, and rye, our Canadian Whisky delivers a character-driven profile with dominant rye spice and oak notes, showcasing a smooth, balanced complexity. We embrace the tradition of Canadian Whisky, offering a versatile spirit perfect for classic cocktails or sipping neat.

🥃Southern Hospitality - Crafted with a blend of corn, malted barley, and rye, this grain-based spirit, reminiscent of Bourbon, is double-distilled in copper pot stills and aged in small oak casks to achieve a rich, flavorful profile. While not yet a Canadian whisky due to its short aging, it offers a balanced sweetness and spice.

The winners of the 2025 Canadian Artisan Spirit Competition (CASC) include:
🍁🥞🥃Spirit 101: Canadian Rum, which won Best in Class in the Alternative Rum category, (first overall in its category), and a gold medal;
🌶️🥔🍅Spirit 101: Hail Caesar Vodka, which won gold in the Infused Vodka category; and
👵🍎🥧Spirit 101: Grandma's Apple Pie, which won bronze in the Fruit Liqueur category.

We've got something to celebrate, TWO new Sparkling Wines have just been released. They are so good they made the Dean's List:
🤍 Blanc de Blancs - This 100% Chardonnay sparkling wine showcases bright citrus notes and a crisp, refreshing profile. Gently whole cluster pressed and aged on the lees for 54 months, it exhibits a delicate mousse, biscuity aromas, and flavors of apple and lemon with a well-balanced, dry finish.
🖤 Blanc de Noirs - This 100% Pinot Noir sparkling wine underwent 54 months of lees aging. Gently whole cluster pressed to preserve delicate aromatics, it exhibits a bright straw color, toasty apple notes, and a dry, medium-bodied palate with red apple and oak spice flavors culminating in a refreshing lemon finish.
