Fiodar Huminski - Formateur AVPN et chef R&D NO.900

Le parcours de Fiodar à commencé en 2008 à la Tavern on the Square et il lance son propre restaurant, Le Bon Vivant, en 2014.

Il investit dans une franchise NO.900 au Quartier des Spectacles en 2019 dans lequel il est alors pizzaiolo. Travaillant avec le maître pizzaiolo italien Mirko D’Agata, il ajoute une touche créative à un menu traditionnel. Il participe à de nombreuses compétitions internationales et possède la certification AVPN.

Fiodar’s culinary journey began in 2008 at Tavern on the Square. In 2014, he opened his own restaurant, Le Bon Vivant, marking a turning point in his career.

In 2019, he invested in a NO.900 franchise in Montreal’s Quartier des Spectacles, where he worked as a pizzaiolo. Collaborating with Italian master pizzaiolo Mirko D’Agata, he brought a creative twist to a traditional menu. He has competed in several international pizza competitions and holds official AVPN certification.

Originaire de Turin en Italie, Mirko est un passionné de la cuisine influencé par ses parents siciliens. Après avoir travaillé dans plusieurs restaurants à travers le monde, il s’installe finalement au Canada en 2012 pour rejoindre Bottega au Québec, puis devient le chef exécutif chez Pizzéria NO.900.

Il remporte plusieurs prix lors de compétitions internationales de pizzaiolo, dont le prestigieux titre de champion du monde de la pizza napolitaine STG à Las Vegas en 2025.

Originally from Turin, Italy, Mirko is a passionate chef deeply influenced by his Sicilian parents. After working in numerous restaurants around the world, he eventually moved to Canada in 2012 to join Bottega in Quebec, later becoming the Executive Chef at Pizzéria NO.900.

He has won several awards in international pizzaiolo competitions, including the prestigious title of World Champion of STG Neapolitan Pizza in Las Vegas in 2025.
