Have you ever asked yourself... "What if flowers and bacon had a baby?"
No?
Just me?
That's the best way I can describe the smell of this mushroom.
I have about 30 "top 5" mushrooms, most of them are tied for second and third place. Don't ask me to choose. They are all so incredible and amazing.
But these guys, are by far my favorites. By a huge margin.
The Black Trumpet.
I used to think I was being silly comparing their scent to bacon and flowers, but it turns out the exact molecules responsible for some of the scents in flowers and in cured meats are actually present in this mushroom! 🤯
It's smoky, meaty, sweet and floral all at the same time. An amazing aromatic experience.
Any time I find these on group walks, at least one person (two if you count me) will hold them and smell them the entire walk. Seriously. They're that good.
The flavor is similarly incredible.
They can be used in both sweet and savory applications. Think candied bacon-esque flavors in desserts, but rich smoky umami flavor with a hint of sweetness when prepared savory.
My favorite way to use them is to infuse them in coarse salt, that way I can use it to hit all of my food with a crazy burst of umami flavor!

When I was in my twenties, I didn't even know it but I was living my life in a constant state of complete nervous system disregulation.
My adrenals were fried, my cortisol was through the roof and my mind raced constantly looking for solutions to problems that hadn't even happened yet.
I didn't know what it felt like to not be in a state of fight/flight.
Actually, this is the entire reason Enchanted Mushroom Forest exists. I found my relief in the forest; using plants, mushrooms, and deep herbal nutrition to nourish and strengthen my system.

She may be gentle, but she’s powerful.

Welcome to the Forest.
The season is ramping up, and with so many new faces joining us lately, I thought it was the perfect time to introduce myself.
I’m Jessika, the owner of Enchanted Mushroom Forest Foraging Company, and this work is rooted in something much deeper than just mushrooms.
One of my very first memories is of foraging mushrooms with my mom under the hot summer sun. She would lead me through the fields and forests surrounding our home, showing me which berries, plants, and mushrooms were safe to eat. She taught me early on: the land provides, if we know how to look.
Back then, I imagined I had a lens into a secret wild kingdom. Gathering herbs and making wild tea felt like returning to the forgotten roots of ancient ways.
But like many of us, I drifted from those roots. As a teenager, I was more interested in hanging out with friends and rolling my eyes at my mom picking food off the ground (teenagers, right?).
It wasn’t until I was a young adult, grappling with the effects of a difficult childhood and living with complex PTSD, that I realized something vital was missing. I had spent years in a near-constant state of fight-or-flight, reaching for all kinds of unhealthy coping mechanisms just to get by. Eventually, my body and brain couldn’t keep up.
But something inside me was being called back.
I began working with herbs again, starting with store-bought teas and tinctures to help regulate my stress. That’s when I learned about a mushroom known as the queen of stress regulation, and discovered that it grew right here in our New Brunswick forests.
So, I returned.
I went back into the woods, this time with a new hunger to reconnect not just with the plants, but with myself. What started with one mushroom quickly grew into an obsession. I immersed myself in wild foods, herbs, and culinary mushrooms, remembering what I had always known deep down: food is everywhere. Healing is everywhere. And we are part of nature, not separate from it.
Through that journey, I found clarity, presence, and a deep sense of peace I’d never felt before. And from that peace came a desire to share what I’d learned.
That’s how Enchanted Mushroom Forest was born.
For nearly six years, I’ve been teaching others how to reconnect to the land, and to themselves. The forest holds a healing quality just by being. Add to that the abundance of wild nutrients, and you have a recipe for deep nourishment, of the body, the spirit, and the soul.
Classes are launching soon, and I’d love to welcome you into this wild kingdom.
