I love having all of my most-used Pampered Chef tools out at the lake. I have used this Electric Twist & Chop almost daily, as well as my Deluxe Multi-Cooker! We eat a lot of veggies & dip and, apart from using our Pampered Chef French Onion Dip Mix with sour cream & mayo (a favourite of ours), hummus adds another, more protein rich and delicious option! All served in our Stay Cool Snackle Box, of course. 😉

It's a good thing I saved money by buying dried chickpeas. Now, if I could only buy sour cream & mayo in bulk, too!

Personally, I would drop the sugar content to 1 Tbsp (better yet, maple syrup) or even leave it out all together, but I'm sure most people will want a bit of sweetness in the dressing.

One of the ways I've learned to slow down the "food chatter" in my brain, and to maintain my weightloss, is to take the guess work out of breakfast. I eat steelcut oats most days, with plain Greek yogurt, fresh fruit, nuts & seeds and cinnamon instead of sugar. I actually look forward to it most days! Once a week (maybe twice), I will have eggs & homemade hashbrowns (thanks to Bill!) ... and fresh fruit, of course. 😋🍓

Just thought I would share, in
case it inspires any of you. 🥰

Sorry Mom, but when I was growing up and you fed us boiled cabbage, I can remember holding as much air in my mouth as possible while chewing it so there was less chance of my tongue touching the cabbage and tasting its grossness. I have never cooked cabbage like that and I never will.

Then along came Bill and he opened my eyes to a new and wonderful way to actually ENJOY cabbage! The first time he made it, I think he used heavy cream in the recipe, but he can't find it now. It was SO GOOD!! Even the next day, the leftovers were so delicious I ate them cold, right out of the leftover container. 🤣

He made them again and used a different cheese on top (he said it was supposed to be Gruyere, but it was too expensive), so he used parm the first time and an aged cheddar the next time. I think he left out the cream the 2nd time, but it was still delicious.

So I decided to give it a try. I searched up some recipes, looking for one with balsamic vinegar that gets reduced with sliced onions (like he did). I couldn't find one. 🙄 But I found THIS one with 1/2 cup of white wine in it and figured it would be good enough, and then if there was an open bottle of wine, then I guess we would just have to drink the rest! 🤷‍♀️

I must say, this is a very yummy way to make cabbage! Here is the recipe I was using as a guideline:

So, if you're like me and have always hated cooked cabbage, but you have a few cabbage heads in the fridge (thank you to my friends at Refeed Canada for my Bounty Boxes that came with cabbage for a few weeks in a row), then I highly recommend you give one of these recipes a try!

Cucumber Mango Salad 🥒 🥭

Dressing:
1 garlic clove
1/4 cup fresh lime juice
1/4 tsp salt
1/4 tsp pepper
1/4 tsp cayenne pepper (optional)
2-4 Tbsp honey (to taste)
2 Tbsp Extra Virgin Olive Oil

Salad:
1 Large English Cucumber, cubed
2 Large Mango, cut into chunks
1/4 cup diced red onion
1 minced jalapeño pepper (optional)

Blend dressing ingredients together and pour over salad ingredients. Allow to marinate for a bit before serving, if possible.

One of my Go To weeknight meals is roasting some sort of meat over top of chopped potatoes and/or veggies on my Pampered Chef Half Sheet Pan & Baking Rack. As the meat cooks, it drips deliciousness all over the veggies below and the result is SO GOOD!! 😋 Not to mention so EASY!! Bake in the oven at 375°F for about 35-45 mins -- use a digital food thermometer to check internal temp of whatever meat you're cooking.
