๐ฉโ๐ณโจ A Day of Fine Dining Inspiration!
Our Culinary Pre-Apprenticeship students had an incredible opportunity to visit Lanoa, Cintroโs sister restaurant, where the chefs welcomed them into the kitchen for a day of learning, demonstrations and hands-on experience.
The chefs demonstrated a variety of creative sweet and savoury dishes, including:
๐ฆช Oyster โ peach, ginger & kosho
๐ฅ Pork Belly โ tallow, lime & perilla
๐ Corn Dessert โ peach gel, miso butter with mochi & cereal milk crunch
Students were introduced to fine dining techniques, explored new kitchen equipment and had the chance to learn directly from talented chefs who have spent years mastering their craft.
After the demonstrations, it was time to get to work! Half of the students teamed up to prepare a staff meal, while the other half helped get the restaurant ready for service by setting up the dining space. ๐ฝ๏ธ
One of the biggest highlights of the day was hearing the chefs share their own personal journeys into the culinary industry. For many of our pre-apprentices, hearing where they started, how they built their careers and where their passion has taken them gave them something very real to aspire to. โค๏ธ
Our students left feeling inspired, excited and thinking about all the possibilities that could be waiting for them as they begin their own culinary careers.

Learning Beyond the Kitchen! ๐๐ฉโ๐ณ๐จโ๐ณ
Last Friday, our Culinary Pre-Apprenticeship students traded the kitchen for the farm and spent an amazing few hours at Urban Roots London!
Students received a farm tour and rolled up their sleeves to volunteer, helping harvest tomatoes and eggplants and tackle some weeding around the tomato and lettuce beds. ๐ฟ Along the way, they learned more about local agriculture, food production, and the incredible work that goes into growing fresh, affordable produce for our community.
We also had the chance to enjoy some of the fresh produce grown by the Urban Roots farm team and volunteers. Urban Roots supports individuals, families, organizations, and restaurants throughout London, Ontario and the surrounding area, helping make fresh, locally grown food more accessible. ๐ฅฌ๐
One of the best parts of the day was seeing our students bond outside of the kitchen while learning where their ingredients come from and gaining a greater appreciation for local agriculture and community food initiatives.
A huge thank you to the Urban Roots team and volunteers for welcoming us and sharing your knowledge! ๐
We canโt wait to return in September to see how much the farm has changed and grown since our first visit. ๐ป

A huge thank you to Jo Rivas, owner of True Taco, for spending time with our Culinary Pre-Apprenticeship students! ๐ฎ๐ฉโ๐ณ
Jo shared her inspiring journey as a local entrepreneur, from launching True Taco in 2009 to building a beloved business that continues to serve authentic Mexican and Salvadorian cuisine at the Western Fair District Market. Her story of perseverance, growth, and passion for food gave our students a firsthand look at what it takes to build a successful culinary business.
Students had the opportunity to learn from Joโs experience, ask questions, and gain valuable insight into the importance of using fresh, local ingredients while staying true to family traditions. Experiences like these help connect classroom learning with the real world and inspire the next generation of culinary professionals.
