Fall Food Preservation Workshop
Hello my name is Leih, I would like to offer a variety of food preservation workshops in the fall and I am looking for community input about what classes might be of interest. Details are still in the planning stages and open to suggestion. Dates and times are not available yet & pricing will depend on workshop type but are estimated to cost in a range of $85-$125
Each workshop will include an introduction to each featured preservation skill (waterbath canning, pressure canning, dehydrating, pantry basics, fermenting, emergency preparedness) information package, hands on experience in a group atmosphere, lunch and snacks, and a selection of goodies to take home!
Due to the amount of instruction, prep and canning times please be prepared for these workshops to be a full day event (most likely about 4-6 hours)
The experience would include a seasonal lunch such as a charcuterie spread, soup or casserole, snacks and beverages, information package including recipes, class instruction and canning tips and each participant will receive a portion of the days preservation (2-4 jars of each preserved item made in class)
During processing and cool down times classes will include a bonus lesson on fun subjects such as bread making, easy just add water mixes, homemade & infused butters and mayonnaise, each project designed and coordinating with the days class theme & ingredients.

The following are some ideas in the planning stages: please comment or private message which workshop(s) you would be interested in joining and any thought or suggestions. I would be looking for 3-4 participants per workshop before I can schedule kitchen space.

Intro to Waterbath Canning: waterbath canning science and safety, equipment, storage and recipes.
Tomato Classics:
Stewed tomatoes
Tomato sauce
Bonus: Artisan bread
Fruit Explosion:
Apple sauce
Cranberry Sauce
Seasonal Fruit in juice, water or syrup
Bonus: Tea biscuits or muffins
Lets Jam!
Blueberry Jam
Strawberry or mixed berry Jam
Bonus: Artisan bread & homemade infused butter
Pickles:
Sweet Pickles
Pickled beets or mixed veggies
Pickled peppers and onions

Sauces and condiments:
-Ketchup & mustard

Bonus: Homemade mayonnaise & Artisan bread
Introduction to Pressure Canning: pressure canning science and safety, equipment, storage and recipes.
Pantry Staples:
-canning beans (kidney beans, chickpeas and black beans)
-canning frozen veggies (peas & corn)
-Fresh carrots in onion soup stock or in water
Bonus: All purpose just add water biscuit mix
Meals in a Jar:
-Beef Stew
-Chicken pot pie filling
Bonus Skills: Corn meal biscuits
Canning Meats:
-Ground beef
-Pulled Chicken
-Beef
Bonus: Dinner biscuits

The world of food preservation and all it entails can be intimidating to jump into on your own and I'd like to join you on your adventure as a mentor/ coach to help you get started and comfortable. Offering private online chats to answer your questions and in person workshops for a more guided first hand experience.
