โ—๏ธ๐Ÿ‡ฐ๐Ÿ‡ท๐Ÿ‡ฎ๐Ÿ‡นSHUT THE FRONT DOOR!! My Tteokbekki Bolognese is seriously delicious ๐Ÿ. This unique dish uses Korean rice cakes called Tteokbekki ๐Ÿ‡ฐ๐Ÿ‡ทThey are like little fluffy pillows that love a sauce. I made this Bolognese sauce similar to a vodka sauce๐Ÿ‡ฎ๐Ÿ‡น but with the addition of some Asian flavors to bring it all together. Seriously this will be a hit. Tteokbekki Bolognese
680g Tteokbekki
1 lb Ground beef
8g (2 tbs) fresh oregano
160g (1) onion - small dice
40g (8) Garlic cloves - minced
156ml Tomato paste
60ml Vodka
236ml (1cup) whipping cream
236ml (1cup) Chicken stock or water
3 + 2 tbs tbs olive oil
80g parmesan cheese
1.5 tbs Gochutgaru chili powder
1 tbs soy sauce
3 tbs fish sauce
1 tsp pepper

Ube Pancakes 
Yield 8 cakes
DRY
260g (1 1/2 cup) AP Flour
18g (3 tbs) Powder sugar
8g (2 tsp) Baking Powder
2g (1/2 tsp) Kosher salt

WET
310g (1 1/4 cup) 3% milk
1 yolk
8g (2 tsp) Ube extract 
4g (1 tsp) Vanilla paste 
57g (1/4 cup) melted butter 

WHITES
3 whites 
1.5g (1/4 tsp) cream of Tartar

Coconut Ube Sauce
200g (1/2 cup) Coconut Milk
4g (1 tsp) corn starch
2g (1/2 tsp) Ube extract
54g (3tbs) Dark AAA maple syrup
2g (pinch) kosher salt 

SPECIAL EQUIPMENT
3x 3 1/4โ€ ring moulds
Rubber Spatula
Mini off-set spatula
Elbow grease 

	1. Sift the dry ingredients together in a large bowl. 
	2. In a separate bowl combine the wet ingredients and mix well
	3. In a steel bowl, preferably copper combine the egg whites with Cream of tartar and beat until still peaks form., about 8 minutes by hand 
	4. Make a well in the middle of the dry ingredients and pour in the wet ingredients. Using a spatula mix until JUST combines. Its okay if there are lumps. (over mixing will lead to stiff pancakes)
	5. Once combines add half the stiff egg whites and gently fold in with a spatula. 
	6. Then add in the remaining whites and continue to fold in until Just combined. 
	7. Heat a large non-stick skillet on medium low heat. 
	8. Using 3 1/4โ€ ring moulds fill them 3/4 full
	9. Cover skillet with a lid and set a 4 minute timer
	10. After 4 minutes carefully flip the rings over using a mini off-set spatula 
	11. Cover with lid and set another 4 minute timer
	12. When timer goes off remove rings to a cooling rack
	13. Using your off-set spatula run in along the inside edges of the ring moulds to release the cakes form the moulds
	14. Repeat this for the remain rings
	
While cakes are cooking/steaming make the Coconut Ube Sauce
	1. In a small pot combine all ingredients 
	2. Whisk well to combine 
	3. Turn heat to medium and continue whisking until sauce comes to a simmer
	4. Once sauce reached a simmer the cornstarch will activate and sauce will become thick
	5. Remove sauce and set aside 
*if you are storing sauce for use later place plastic wrap directly on surface of sauce to prevent a skin form forming
