SLOW COOKED BRISKET
Preferably use a slow cooker, however the oven will also work.
1.5 – 2 kg / 3 – 4 lb beef brisket
1 tbsp oil
Rub:
1 tbsp brown sugar
2 tsp paprika powder
1 tsp onion powder
1 tsp garlic powder
1/2 tsp cumin powder
3/4 tsp mustard powder
1 tsp salt
1/2 tsp black pepper
1-2 cups BBQ Sauce
Instructions
Mix Rub ingredients. Rub all over brisket. If time permits, leave for 30 minutes – 24 hours in the fridge, but it isn’t necessary.
Combine BBQ sauce & brisket in slow cooker or oven on 250.
Slow cook in slow cooker or oven for 8 hours (1.5 kg / 3 lb) to 10 hours (2 kg / 4 lb).
Remove brisket onto a cutting board.
TO SERVE: Slice brisket thinly across the grain and serve with remaining BBQ Sauce. This is terrific served as a meal with sides or piled high onto rolls with Coleslaw as sliders.

- AMAZING DEAL ON CHICKEN BREAST -
$3.97/lb is a great price for chicken, I recommend only spending max $5/lb on any meats. This is a great method to ensure you spend the least amount possible on your groceries.
Please note, this has to be purchased specifically at Superstore due to it being a specific brand of chicken on sale.
I’ll be posting a recipe for chicken cooked in the oven from frozen very shortly!

BLUEBERRY BISQUICK MUFFINS
Doesn’t everyone love blueberry muffins?
2 cups Bisquick
5 tsp cinnamon
1 egg, slightly beaten
2/3 cup milk
2tbsp vegetable oil
1/3 cup sugar
1 cup frozen blueberries, frozen
Heat oven to 400 degrees and line 12 muffins cups with paper liners. Lightly apply non-stick spray to papers to make muffin removal easier.
Place all of the ingredients except the fruit into a large mixing bowl. Stir until ingredients are barely incorporated, and then gently fold in the fruit.
Fill muffin cups about 2/3 full.
Bake for about 15-17 minutes, or until golden brown, and toothpick comes out clean.
Remove muffins from pan and allow them to cool slightly before serving.

INSTANT POT BEEF STEW
Use your Instant Pot to create a soft & tender stew, perfect for chilly days!
2lb beef roast
Large splash vegetable oil
3 carrots, washed & peeled
2 stalks celery, washed
1 onion, washed
3 cloves garlic, peeled & minced
6-8 potatoes, washed & peeled (if preferred)
6 cups beef broth or 3-4 tbsp beef better than boullion (preferred)
1+ tbsp cornstarch
Mince garlic very finely & chop all remaining ingredients into bite size pieces. Make sure the onion is chopped finely, however.
Chop beef into bite size pieces as well. Put into Instant Pot, seal & set for 2 hours. Once time is up, let it naturally release for at least 3 hours, but as long as possible.
When meat is half done cooking (in about the last hour), put a large pot onto the stove. Add the large splash of oil to the pot & turn element to medium-low. Heat oil for 2-3 minutes, then add onion. Sauté until almost translucent, once at this point add garlic. Continue cooking until garlic is fragrant, DO NOT BURN! If garlic burns, you have to throw it out and start over because it will ruin the final dish.
Add remaining vegetables & broth (or 5-6 cups water & better than boullion). Let vegetables cook & simmer while meat finishes cooking. Continue simmering until vegetables are soft.
When vegetables are soft, release the pressure from the Instant Pot. Remove the meat & add to stew pot. Stir & turn heat to low. Let simmer for another 1 hour.
Once fully cooked, combine around 1tbsp cornstarch with a glass of cold water. Make sure it is fully combined with no lumps. Once combined, slowly whisk into stew, again ensuring there are no lumps. Once fully combined, let cook for 5 minutes & check thickness. If it is not thickened to your liking, repeat this step.
Serve hot.
