Yep that time of the season! The grandsons are asking for a little White Pine Needle Soda! It has a bright clear crisp taste with a little (sometimes a lot) of fizz! Be careful some types of pine needles can be bad for you! I prefer it with a little less sugar but you need it for the fermentation. The natural wild yeast gives mixes with the sugar to give your the fizz! A tasty "experiment" to do with your kids and family. What other ways do you use your pine needles?

White Pine Needle Soda

1 Quart Size Mason Jar
2 Cups White Pine Needles (make sure you use the appropriate pine needles! Some can be bad for you. )
2 1/2 Cups Cold Water
2-4 Tablespoons Sugar

Directions:
Gather 2 cups of white pine needles
Gently rinse the pine needles in cold water (do not scrub or use detergents)
Put pine needles in to quart size jar
Mix 2 ½ Cups cold water with sugar- organic sugar- or honey (unfortunately real sugar works better!)
Pour mixture into a jar
Let sit for 2-3 days before checking.
Place in a well lit area but not sun! Watch the bubbles begin.
Try it over ice.
