GRAYCLIFF RESTAURANT’S CONCH CHOWDER IS OUT OF THIS WORLD
Bahamian Dish Travels to Space
Graycliff Hotel & Restaurant’s signature conch chowder has officially gone where no Bahamian dish has gone before, space! The acclaimed chowder was part of the flight kit carried by former NASA rocket scientist and Bahamian-American Aisha Bowe aboard her historic all-women Blue Origin New Shepard mission on April 14, 2025.
“I folded the conch chowder and had it in my pocket,” says Aisha Bowe with a smile, reflecting on the moment she brought a taste of The Bahamas on board. The idea to take the freeze-dried chowder was a collaboration between Aisha and her cousin, Chef Elijah Bowe, Executive Chef at Graycliff Hotel & Restaurant, during a casual family conversation.
“This is more than just our soup going to space,” says Enrico Garzaroli, owner of Graycliff Hotel & Restaurant. “It’s a celebration of Bahamian excellence and heritage.”
The encased freeze-dried conch chowder pack, now on display in the Lounge at Graycliff Hotel & Restaurant was “unveiled” prior to a dinner hosted by Prime Minister, The Hon. Brave Davis and Minister of Foreign Affairs Fred Mitchell honouring British High Commissioner, HE Tom Hartley.
