Most of us are trying to eat more vegetables and really… we just seem to overcomplicate it.

Catherine shared a few of her favourite ways to get more veg into your day, without spending hours in the kitchen, on mymarketkitchen.

One of her biggest tips? Stop throwing out your broccoli stem. They’re delicious, in fact, Catherine calls them her childhood chocolate bar.

A few simple tricks can make vegetables the part of the meal you actually look forward to eating.
