A Taste of Provence – Tian de Légumes 🍅🍆🌿

Sometimes the simplest dishes capture the spirit of a region better than anything else.

The Tian de Légumes is a Provençal classic: layers of ripe tomatoes, zucchini and eggplant, slowly baked with garlic, thyme, rosemary and a generous drizzle of good olive oil.
The secret? Beautiful seasonal vegetables, patience and slow cooking. As the tian gently roasts, the vegetables become tender and slightly caramelised while their juices mingle with the herbs and olive oil.

Serve warm or at room temperature alongside grilled fish, roast chicken or lamb, or simply with some crusty French bread to soak up those wonderful Provençal juices.

☀️ This is Provence on a plate: sun-ripened vegetables, fragrant herbs and olive oil, transformed into something delicious through simplicity.

Why do some ingredients need to be at room temperature?

Have you ever followed a recipe that says “butter and eggs at room temperature” and wondered if it really matters?
Like many things in life, understanding why you are doing something is often the best way to succeed, and improve your baking results.
In pastry and baking, temperature is not just a detail. It can completely change the final result.
When ingredients such as butter, eggs, milk or cream are at a similar temperature, they combine much more easily, creating a smoother and more stable mixture.
🧈 Butter
Softened butter incorporates air much better when creamed with sugar. This helps create cakes that are lighter and have a more even texture.
🥚 Eggs
Cold eggs added to softened butter can cause the mixture to split or curdle. Room-temperature eggs emulsify much more easily with the other ingredients.
🥛 Milk & cream
Adding very cold liquid to a room-temperature mixture can suddenly cool the butter and cause it to solidify, affecting the texture of your batter.
🍫 Chocolate
Temperature becomes even more important when working with chocolate. Adding something very cold to melted chocolate can cause it to thicken or create an uneven emulsion.

But here is the important part: room temperature is not always better!

For some preparations, we deliberately want ingredients very cold, think whipped cream, pastry dough or certain types of biscuits.
Good baking is not simply about following a recipe. It is about understanding why we do each step.
And the more you understand the why, the easier it becomes to recognise what went wrong, and how to make it better next time. 👨‍🍳

🍫 Good chocolate versus poor-quality chocolate, can you really tell the difference?

Good, quality chocolate should have a pleasant aroma, a smooth finish and, when correctly tempered, a clean snap. It should melt evenly in your mouth, gradually releasing a balanced and complex chocolate flavour.

Lower quality chocolate is often excessively sweet and may contain cheaper vegetable fats instead of cocoa butter. This can create a waxy texture, a greasy finish and a much flatter flavour.

The difference becomes even more noticeable when making French pastry. The quality of the chocolate directly affects the flavour, shine and texture of your ganache, mousse, tart or glaze.

My advice: always read the ingredient list. Look for chocolate containing cocoa mass and cocoa butter, and remember that a higher cocoa percentage does not automatically guarantee better quality. In French pastry, technique is essential, but the finished dessert can only be as good as the ingredients you choose.

Would you be able to recognise good-quality chocolate in a blind tasting?

It is citrus season, and of course the classic lemon tart is always a favourite. But why not be a little more adventurous and use other seasonal citrus fruits such as oranges, mandarins, or even grapefruit?
You can keep your favourite tart recipe and simply reduce the proportion of sugar to balance the natural sweetness and acidity of the fruit.
Also, if you have plenty of lemons in your garden or if your neighbours are generous enough to share them, a useful tip is to squeeze the juice and freeze it in portions. This way, you can enjoy the flavour of fresh citrus all year round.

Bon appétit!
