Thank you to all those who attended the Pho Master class today. The left over stock is going in the freezer (with brisket) for some future .
Yup that stock was started yesterday and been going all day so it has really reduced as you can tell by the colour, and it passed the test 😍

Phở ❤️ It’s freezing outside and my kitchen is full of these aromas right now! The labour of love starts tonight and we can all enjoy this tomorrow.

We’ll be fermenting mustard greens and making kimchi. We’ll pickle bean shoot, carrots and chive. We’ll make a fermented tofu dipping sauce for our greens and enjoy lunch with caramelised chicken and ginger, jasmine rice and finish off with mochi balls filled with peanuts and coconut.
