Ideal for filter brewing at home or even in the cafe, what surprised us is how easily it transitions from filter to espresso grinding. We want to properly introduce you to — who joined our team a month ago!
Erin has taken over managing our Ringwood coffee bar and has begun running coffee classes from that location. She previously was the manager at Bellboy Coffee Bar in the Queen Vic Market, along with other high volume specialty coffee cafes, and also currently works part-time at the Elgin Inn Hotel. She brings with her a warmth and friendliness to every training session and has a constant drive to keep learning and improving.

It is with a happy (but heavy) heart to let you know our coffee bar manager and trainer .pishori will be moving on to bigger and better things in May, while also focusing more on building his coffee business — as a past student of MCA, we are proud of how far he has come and the wonderful work not just as a barista but also a trainer, teaching many students over the last couple of years. We’re so happy to know he is moving on to an exciting new role and look forward to sharing more in due time.
This means we are looking to hire a casual barista / junior trainer to join our team, focusing on our Ringwood coffee bar and training site from Monday - Friday.
This is not a normal barista role, nor will it be a barista trainer role - it’s a hybrid of both. The main role will be operating a coffee bar at in the mornings with the plan to eventually equip the right candidate to be a trainer at MCA. We are looking for the right person - character, work ethic and people skills come first. However, at least 2 years of solid experience in a specialty coffee cafe/roaster would be necessary as you will need to be able to work independently, dial in coffees, pour latte art and teach basic barista skills. Clear communication and attention to detail are crucial.
We want to make it clear that this is not a role for new baristas. It’s also not a role for super-experienced ones. We want someone who loves coffee and is passionate about training and education but hasn’t had the opportunity to train yet. We live and breathe it and want to bring out the best in you. You will be part of our monthly cuppings, R&D sessions and team meetings… Between us, we have over 60 years of experience in the industry and are keen to add the right person to the team.

When discussing the caliber of participants suitable for the course, we had to seriously consider who could actually pass a certification process as stringent as
This is not for everyone.
It is for an elite few who have spent years mastering their craft — whether it be behind the coffee bar or through the barista competition scene.
Hence, it was perfectly suited to have .tan as the first person to do the course.
Gabrel is not just the current 2026 Australian Barista Champion. He is also a WBC finalist coach, a veteran of the competition scene and previously spent years working at some of the best cafes in Melbourne. He is currently the Brand Ambassador for and is a multi-disciplinary coffee professional who further excels in roasting and green sourcing.

She is a master of filter coffee brewing and will provide exceptional feedback for the Filter Coffee Assessment process.

Our next Industry Assessor is
Victor is the current and 3 x Australian Latte Art Champion and is highly regarded as one fo the best latte artists in the world. He previously worked .melbourne as a Barista Trainer and is currently a Sales Manager . As a master of the craft of latte art and heavily involved in the competition scene, he is perfectly suited as an Industry Assessor for the Latte Art component.

His experience and ability to provide concise and accurate feedback will be invaluable as he leads our Solo Service Assessment.
