My friends and I recently had the pleasure of experiencing a truly incredible evening at La Cucina di Sandra, and we simply can't stop raving about it!
Our cooking class with Sandra was an absolute delight from start to finish.
Sandra's expertise in Italian cuisine is truly unparalleled. The cooking class was perfectly paced, allowing us to absorb every detail and technique she shared.
Her passion for the culinary arts was evident in every step, and we found ourselves learning so much more than we had anticipated.
As for the dishes prepared and enjoyed, they were nothing short of outstanding. Each course was a masterpiece on its own, and they led perfectly from one dish to the next.
Our third course, was the most delicious ragu any of us had ever tasted (including our friends who just returned from several weeks in Italy!)
The presentation of the dishes was equally impressive, a feast for both the eyes and the palate. (My photos do not do it justice).
Aside from the incredible food, the warm and welcoming atmosphere of La Cucina di Sandra added an extra layer of enjoyment to our evening.
The hospitality we received was impeccable, making us feel right at home. Sandra's attention to detail and genuine care for her guests truly set the tone for an unforgettable experience.

Do dreams come true? Yes they will on 14/6/23 when I get to cook in my kitchen with a legend, YES!
I am super excited to have the wonderful young Roman chef Sarah Cicolini coming to La Cucina dI Sandra to present a master class concentrating on classic Roman dishes. Sarah, an Abruzzese DOC like me, is the chef at my favourite restaurant in Rome, Santo Palato, where the watch words are seasonality, quality of ingredients, authenticity and tradition. A must visit Roman trattoria. I am looking forward to learning a lot from her and tasting great natural wine from Giorgio de Maria Fun Wines.

Yes, it’s the gorgeous Livinia Nixon from Channel 9 Postcards with me in my kitchen!!!We have just finished preparing aquasale, the delicious salad from Puglia. You can watch us working together on the next Postcards episode that goes to air Sunday 14 May at 5:30pm. It was tremendous fun working with her and the super professional Postcards team. Can’t wait for Sunday!!

Our quick and easy Saturday night dinner. Calamarata with prawns and cherry tomatoes. This is a good example of taking care to choose pasta shapes that match the sauce. If you look carefully you will see how the prawns and cherry tomatoes nestle inside the calamarata.

Ricotta ravioli. To me this is the essence of Italian cooking. Top quality ingredients and precise cooking that highlights wonderful flavours. Top quality flour, ricotta, butter and Parmigiano Reggiano 24 months.
Everything from where quality is to be found 😍

It’s been a very long time since I have posted on Instagram. I have been very busy catching up on a huge backlog of bookings for my classes. Thanks CoVID. And with shopping for, preparing and running 3 and sometimes 4 classes a week I have not had much time for social media. Three classes per week with 8 people in each is a lot of cooking. Now I am back to share what’s been happening at La Cucina di Sandra with you. So to begin…. I grew up by the Adriatic Sea in Italy so naturally I adore cooking all types of fish and seafood. This is a pasta I made for lunch with friends. It’s my own recipe. Tubettoni with mussels. . 🇮🇹

When I finish a class, my guests have gone, it’s late, I am hungry and tired, I don’t feel like anything that takes much effort to prepare. Here is something very simple, very easy and delicious made from what I often have at hand. A can of crushed tomatoes, mussel stock and a few mussels. Simplicity itself and just delicious.

This is a put together dinner we had using bits and pieces remaining from my Puglia class. Not a recipe, more an assembly of ingredients on hand. A soupy combination of mussel stock, cavatelli, tomatoes, chickpeas, pipis and mussels. A warming plateful of the flavours of land and sea. Just the thing to slowly savour while relaxing after my guests have gone home and it’s 11pm.
