After encouragement from friends here in Brisbane, the Doña Terecua’s Recipes project of 'Cooking Lessons of Authentic Mexican food’ has launched. 🇲🇽
Terecua is the

nick name that one of my brothers gave to my mum Teresa. I learnt to cook Mexican food based on my Mum's advice, that is why I have called the lessons 'DOÑA TERECUA'S RECIPES' 💖
These lessons will not be just cooking, they also will be cultural, using Spanish and with food tastings of course! Groups will be a maximum of 5 students, and you can book in any day of your choosing (upon availability). If you are interested, please send a message. 😊

Después de muchos ánimos que muchos amigos me han dado aquí en Brisbane, voy finalmente a llevar a cabo mi proyecto de 'Clases de Cocina Auténticamente Mexicana'🇲🇽
Terecua es el apodo que mi hermano Alejandro le puso a mi mamá. Y como mis conocimientos de cocina son gracias a ella le quiero llamar a mi proyecto:
'LAS RECETAS DE DOÑA TERECUA' 💖
estas recetas no van a ser sólo de cocina, sino también culturales, de idioma español y de sabor! Los grupos serán máximo de 4 personas así que si lo quieren hacer con algún amigo/a avísenme. Si tu o alguien que tú creas que esté interesado/a por favor mándame un mensaje personal.

El bolillo no nació en México. Pero terminó volviéndose indispensable en la mesa mexicana.

Antes del siglo XIX, el pan cotidiano en el país era distinto. El trigo había llegado con los españoles desde el siglo XVI, pero las piezas de pan eran más densas y seguían técnicas heredadas de la panadería colonial. El cambio llegó con un episodio político inesperado: la Segunda Intervención Francesa (1862-1867) y el breve imperio de Maximiliano de Habsburgo.

Con los soldados y funcionarios europeos llegaron también panaderos. Uno de los nombres que más aparece en las crónicas es el de Camille Pirotte, un panadero belga que llegó con las tropas francesas en 1864 y enseñó técnicas modernas de panificación en ciudades como Guadalajara. Sus métodos usaban fermentación y masas más ligeras, inspiradas en el pan francés. 

De esas técnicas nació en México una adaptación local: un pan más corto que la baguette, con corteza crujiente y una hendidura al centro. Con el tiempo se volvió el bolillo. Su tamaño lo hacía práctico, barato y fácil de hornear en grandes cantidades, por lo que rápidamente se extendió en panaderías y mercados urbanos. 

Y entonces ocurrió algo muy mexicano: alguien lo abrió por la mitad.

Para finales del siglo XIX ya era común rellenarlo con frijoles, queso, jamón o carne. Así nació la torta, una comida pensada para la vida urbana: rápida, portátil y sustanciosa.

Con los años el bolillo dejó de percibirse como un pan extranjero. Se volvió parte del paisaje cotidiano: en los molletes del desayuno, en las tortas del mercado, en las guajolotas de la mañana o incluso en el famoso “bolillo para el susto”.

Una intervención extranjera dejó muchas marcas en la historia de México.

Entre ellas, uno de los panes más mexicanos que existen.

On the 12 of December in Mexico 🇲🇽 and the Day we celebrate Guadalupe virgin.

Legend has it that a baptized Aztec Indian named Juan Diego was walking on the hill of Tepeyac in the dead of winter, when he saw the apparition of young girl. She asked him to visit the local bishop and tell him that the Virgin Mary wanted a church built in her honor on the hill. Juan Diego did what he was told, visiting the local archbishop several times, but each time the bishop rejected his story.

Upon Juan Diego’s last visit to the hill, Mary told him to go gather roses in a different part of the hill – roses that could not possibly be growing at this time of the year. To his surprise, the roses where exactly where she said, and he gathered them up in his tilma (a cloak-like poncho) and carried them to the bishop. When he laid the flowers at the feet of the bishop, the front of his tilma was adorned by the image of the now-famous Virgin de Guadalupe, and the bishop was convinced of the miracle of her sighting

This church is the most visited in Mexico 🇲🇽 coming people from all over the country. Some finishing with meters on their knees. Many asking for miracles. Schools visits too.
There are dances and serenades from famous singers all night long.

Se dice , no 🫓😯 La palabra Tortilla, no es una palabra mexicana ni proviene de ninguna lengua mesoamericana, es de procedencia española. La palabra "tortilla" proviene del latín y significa "pequeña torta".
Los españoles nombraron "tortilla" al "Tlaxcalli" (Tlashcali), nombre original en náhuatl de la tortilla mexicana.
Una prueba de que la palabra "tortilla" no proviene del náhuatl, es que el náhuatl clásico es decir de hace 500 años, no tenía la letra "R".
De hecho, en el idioma náhuatl prehispánico; no existían los sonidos correspondientes a las letras B, D, F, J, Ñ, R, V, LL y X.
Los sonidos que más han generado confusión son los de la LL y el de la X.
La LL en palabras como Calpulli, Tollan, Calli no se pronunciaba como suena en la palabra llanto, sino como en lento; la X en todo momento se pronunciaba sh, como shampoo, en inglés.

I prepared Picadillo a very common minced meat dish at home with rice and my favourite veggies combination of zucchini with corn 🌽😋

I told her that when Steve goes with me to Mexico he gets surprise of how long is the amount of options for eggs in menus.
I made black beans and we had scrambled eggs in a bowl of beens with salsa 🌶️😋

This was the 1st time I cook Udon noodles in a dish with chicken, ginger and garlic 🧄 🫚 It was delicious! 😋
I also made a Green Pea Salad 🥗 with mint leaves 🍃 and feta cheese.
And a salad dressing of lemon, garlic and honey 🍋🧄🍯
Absolutely delicious both of them! 😋
I was very happy with the results and Steve was laughing because I keep saying: mmmm😋 this is so good 😊
I’ll definitely do it again in a couple of weeks 😊👍🏼
