We had the privilege of meeting the local culinary legend, Chef Robyn Barrand at her cooking school yesterday. We were blown away by the kitchen setup, French copper cookware, modern cooking equipments, beautiful market garden and welcoming smile and generosity of Chef Robyn.

We used freshly laid eggs from Cucina Colac Cookery School to make this omelette. Sri Lankan omelette traditionally is an open-faced, laced with just the right amount of heat to wake you up in the morning. Coconut oil sautéed French shallots, sliced green onion, chillies flakes, curry leaf and freshly ground black pepper are some of the most common ingredients that can be included the in recipe.

Sri Lankan Omelette
Ingredients
3 organic eggs
½ teaspoon salt
1/2 teaspoon Pepper
1 tbsp. organic butter butter
1 tbsp. organic coconut oil
1 tomato (diced)
Few mushrooms (sliced )
2 green chillies (chopped)
½ red onion (chopped)
5 curry leaves (chiffonade)
1 slice of organic or free-range ham of the bone, shredded (optional but recommended )
1/2 an avocado to serve with
Method
>Beat eggs in a small bowl, adding salt and pepper to taste.
>Heat the oil in a small, non-stick pan, on medium heat.
>Add red onions, mushrooms, chopped chilis, curry leaves and optional ham. cook thoroughly, until the onions are tender – 4-5 minutes.
>Add the tomatoes and cook for 30 seconds.
>Add butter and allow to melt.
>Pour in beaten egg; allow to cook for 2-3 minutes or until the egg has set.
>Flip omelette and cook for another 2 minutes or until done as desired.
