This week, our SIT30821 Certificate III in Commercial Cookery students focused on - SITHCCC035 Prepare poultry dishes πππ¨βπ³π©βπ³
Throughout the class, students explored a range of poultry preparation and cooking techniques using chicken, duck, quail and chicken liver while reinforcing important food safety practices and cooking temperatures.
The session included the preparation of several dishes such as Chicken Katsu, Coq au Vin, bacon wrapped chicken breast with risotto, duck pasta and homemade chicken liver pΓ’tΓ© served with fresh baguette and onion jam.
A fantastic practical class showcasing creativity, teamwork and hands-on industry skills in the kitchen!

AILFE Graduate Success Story: Williamβs Journey From Passion to Plate π¨π»βπ³
Williamβs culinary journey is a story of passion, resilience, and growth. After facing challenges during the pandemic that forced him to close his restaurant in Indonesia, he decided to rebuild his dream by studying the Commercial Cookery course at AILFE.
During his studies, William gained hands-on culinary skills, knowledge in kitchen operations, food safety, menu planning, and valuable industry experience while working in several well-known restaurants across Perth. His time at AILFE helped strengthen his confidence, expand his culinary creativity, and prepare him for the modern hospitality industry.
After graduating from AILFE in April 2025, William returned to Indonesia and proudly reopened Resto & Cafe Cimanuk with a fresh new concept combining Sunda cuisine, seafood, Western dishes, and fusion flavours inspired by his international experience.
We are proud to see our graduates turning passion into success and making an impact in the hospitality industry.

Practical Use of English in the City Setting
Our General English (evening class) students explored the city in teams to complete real-life English challenges.
Activities included asking strangers for help, ordering coffee, asking for directions, and interacting with city dwellers, all while building confidence and communication skills in everyday situations.

We are proud to share that our recent graduate, Huyen, represented AILFE at the Student Panel during the Discovery Perth Agent Week organised by
Huyen graduated from her 2-year Cookery course at AILFE in April 2026 and was selected to share her journey as an international student studying and living in Perth.
During the panel, she spoke about her study experience, life in Perth, and her pathway in hospitality, helping education agents from Sydney and Melbourne better understand the international student experience in Western Australia.

Today, in our SITHCCC027 Prepare dishes using basic methods of cookery practical session, our SIT30121 Certificate III in Patisserie students got hands-on experience applying essential culinary techniques. π§βπ³β¨
Throughout this unit, students are developing the skills and knowledge required to use a range of basic cookery methods to prepare quality dishes; building strong foundations for their future careers in hospitality and patisserie.

Our ELICOS students explored history beyond the classroom today with an excursion to the State War Memorial.
As part of their lesson, students learned key vocabulary such as remembrance, sacrifice, honour, and service; bringing these words to life through real-world context and meaningful discussion.
This visit also connects with ANZAC Day, observed tomorrow, helping students understand its cultural significance and the importance of reflection.
