“Creativity is intelligence having fun.” – Albert Einstein

This week at LSEL we explored our creativity through construction and loose parts play for Inventor's Day💡

Playing with loose parts can build on children’s learning by increasing physical activity, enhancing cognitive skills, increasing focus and engagement, boosting natural curiosity, inviting conversation and collaboration and developing problem solving skills.

Our little Inventor's loved using their imagination to turn everyday items into something special!

NUT FREE GRANOLA BARS

We are highlighting one of our centre faves this week... you should definately give this one a go.. it is DIVINE!

You will need

135g - cups of gluten free rolled oats
60g - cups desiccated coconut
95g - dark chocolate chips
70g - rice bubbles
20g - cornflakes
175g - rice malt syrup
3 tbsp - coconut sugar
120g - unsalted butter
3 tsp - vanilla extract
Pinch of salt

Prepare – line a square cake tin with baking paper.

Preheat oven to 160C fan-forced.

Toast – in a 160C oven, toast your oats for 5 minutes, then add the coconut and bake til golden.

Keep an eye on it, as it will only take 2 minutes and can burn quickly.

Mix Dry Ingredients – in a large bowl combine the oats, coconut, chocolate chips, rice bubbles and flakes.

Mix and Heat Wet Ingredients – in a small saucepan over medium heat, combine the honey, sugar, butter, vanilla and salt.

Stir continuously until the mixture starts to froth and caramelise slightly.

Pour over & Mix Quickly – you then need to be really quick, pour the caramel over the dry ingredients, mix quickly with a wooden spoon then pour into tin and spread evenly.

Bake – bake in the oven for 25 minutes, remove and place on wire rack to cool. It will harden as it cools.

Cut into 12 bars once cooled.. put a bib on, there will be drool 🤤!!!!

The original ANZAC biscuit was a savoury version, known as the ANZAC tile or wafer, that was first given to soldiers as rations during WW1.

It had been claimed that these biscuits were sent by wives and women's groups to soldiers abroad as the ingredients do not spoil easily and they kept well during naval transport.

See our simple recipe below:

• 2 cups - rolled oats
• 1 cup - plain flour
• 3/4 cups - white sugar
• 125g butter chopped
• 2 tablespoons golden syrup
• 2 tablespoons water
• 1 teaspoon soda bicarbonate

□ Preheat the oven to 160° (fan- forced)
□ Combine all dry ingredients
□ Heat butter, syrup and water in a saucepan until melted - then stir in soda bicarbonate
□ Add wet mixture to dry and combine
□ Shape tablespoons of the mixture into 28 balls
□ Arrange balls on prepared trays 8cm apart
□ Press lightly to flatten

Bake for 18-20 minutes until golden brown

COOL, SERVE & ENJOY

✨Today we celebrated the Hindu festival of Diwali, the festival of light, celebrating the victory of good over evil, light over darkness.
To celebrate, Hindu people create the most beautiful and colourful art called Rangoli which our children engaged in today. They used colourful sand and glue to create gorgeous patterns.
Hindus also enjoy delicious foods, sweets and savories so our superstar chef Lisa curated a delicious Indian menu for us and we also made some sweet treats called Coconut Ladoos which are waiting for our families to try in the foyer.
Finally, the educators and children all got dressed up and listened and danced to Indian music as suggested by one of our wonderful families. ✨
Landsdale School of Early Learning would like to wish everyone who celebrates, a, very happy Diwali and a prosperous and joy filled new year. 🥰
