Kajang is a township in Selangor, Malaysia, most famous as the ‘Satay Capital’ that has enchanted local foodies with their generously sized meat skewers, marinated with a fragrant blend of herbs and spices, and served with a richer, spicy-sweet and tangy peanut sauce.

Cumin, coriander, galangal and lemongrass are some of the favoured aromatics in Kajang satay marinades, alongside the traditional turmeric. Blended with Chinese dark soy sauce and Kecap Manis for a complex fragrance and savoury-sweet depth, while the dipping peanut sauce is uplifted with similar herbs and spices, and the addition of tamarind paste and heaty dried chillies. Nasi Impit is a Southeast Asian compressed rice cake imbued with the mild sweet aroma of Pandan leaves. Traditional Korean rice cakes are made by first steaming a mixture of rice flour, water and salt into a base dough, gently pounded with pestle and mortar till it becomes smooth and elastic, then sliced and rolled into bite-sized cylindrical pieces.

Korean rice cakes are enjoyed in a plethora of yummy dishes, and the iconic street food Tteokbokki is among the most popular. Spicy, savoury-sweet, and nutty Satay peanut sauce flavours rice vermicelli noodles in this saucy and appetising Singaporean street food special. An easy, flavourful meal to enliven your day!

Spice Paste
12g dried chillies
40g shallots
25g garlic
10g galangal
1 lemongrass (white part only)
½ tsp coriander seeds
½ tsp cumin seeds
3 candlenuts
½ tsp belacan
4 tbsp oil

Peanut Sauce
160g toasted peanuts
25g palm sugar (gula Melaka)
130ml coconut cream
1 tbsp concentrated tamarind paste
260-280ml hot water
1 tbsp kecap manis
½ tsp salt

Assembling
100g rice vermicelli, soaked
8-10 stalks of kangkung (water spinach)
6-8 squids strips
6 large shrimps
2 fried bean curd puffs
