花乐 Basmathi 腊味饭



Floral Basmathi Lap Mei Fan


配料:

2杯花乐Basmathi 米饭

3汤匙食用油

8瓣大蒜(切丁)

1茶匙酱油

1汤匙蚝油

1茶匙麻油

1汤匙米酒

香菜/青葱

3-4个葱(切成小块)

1只腊鸭大腿(鸭腿)

1个腊味五花肉(桂花肉)

1个中国香肠(腊肠)

400g腊味腊肠(润肠)

方法:

第1步
混合芝麻油,酱油,米酒,蚝油

第2步
将肉放在锅中1分钟,以便稍后去除皮。
去除皮后,将它们全部切成薄片(腊鸭除外)

第3步
除去表皮后先处理大腿腊鸭,将表皮和肉分别切成小块,各放在一个碗中,然后用一些油将一些蒜末炒以备用。
将骨头放回水中再煮15分钟。 留着水来煮米饭。

步骤4
将白米冲洗后,用煮鸭的水在电饭锅中煮。

第5步
加入油和蒜末炒鸭皮,待用。
炒葱至金黄色,将油分开,放在一旁

第6步
将米饭煮半后,将切好的肉放在蒸米饭的表面,等待米饭完全煮熟。 保温10-15分钟。

步骤7
之后,倒入炸鸭皮,炸葱,炸油,炸大蒜,混合调味料,一些香菜和青葱一起放入电饭锅中。 上桌前,重新加热煮5分钟。

配上一些香菜,青葱,炸的葱并可上桌食用。











INGREDIENTS:

2 cup Basmathi rice

3 tbsp cooking oil

8 clove garlic (diced)

1 tsp soya sauce

1 tbsp oyster sauce

1 tsp sesame oil

1 tbsp chinese wine

Coriander/spring onions

3-4 pc Shallots (cut small pieces)

1 pc Waxed duck thigh (lap duck)

1 pc Waxed pork belly (lap yun)

1 pc Chinese sausage (lap Cheong)

400g Waxed pork belly (Lap nyuk-cured meat)

METHOD:

Step 1
Combine n mix Sesame oil, soya sauce, cooking wine, oyster sauce set aside

Step 2
Blanch meat in a pot for 1min to remove the skin later.
After remove skin, cut them all into slices (Except lap duck)

Step 3
Handle the lap duck by removing the skin and separately cut skin and meat into small pieces put in a separate bowl, then fry the minced skin with some minced garlic with some oil - set aside.
Place the bone back into the water to boil for another 15 mins. Save the water for boiling rice later.

Step 4
Rinse n Boil Rice with the boiled duck water n cook in rice cooker.

Step 5
Add oil and Fry lap duck skin with minced garlic, set aside.
Fry shallots til golden brown, separate the oil and Set aside

Step 6
Once rice is half cook, place the cut meat into the top of the steaming rice and wait for rice it to fully cook. Keep warm for 10-15 mins.

Step 7
After that, pour in fried lap duck skin, fried shallots, fried oil, fried garlic, mixed sauces, some coriander n spring onions n mix altogether in the rice cooker. Reheat and cook for 5 min before serve.

Garnish with some coriander, spring onions, fried shallots and serve.
