Day 5 - Jaffna 🇱🇰
An incredible day learning and cooking Jaffna Food. Chef Gideon and his team took us through the steps of - Rasam,
Thosai, Goat curry, Sambar, Mint Chutney and the sweet dessert Modagam, offered to the Hindu God Garnesh.

Day 2 - Negombo - Miris Trails cooking class. After a visit to the fish market we started our class. Stringhoppers, Hoppers, Chicken curry, Fish curry, Prawn curry, Dhal, Brinjal moju, Potato curry and Coconut sambol

Day 2 Miris Trails 2026 -
Toddy tapping, but not the alcoholic type! These are Kittul palms and like the coconut tree you can tap the sap of the flower to make toddy (a fermented alcohol). In this case they boil it down and make a thick syrup called Kittul Pani or treacle. Further boiling creates a hard sugar or Kittul jaggery. I can’t tell you how delicious the pure Kittul jaggery and treacle tastes. Poured over fresh buffalo curd in the morning or evening adds a layer of healthy probiotics to your gut… and it tastes so darn good.

What is Breudher?
The origins of Breudher cake can be traced back to the Dutch colonial period in Sri Lanka, which lasted from the mid-17th to the late 18th century. The Dutch settlers brought with them various culinary traditions, including the Breudher cake, a specialty from the Netherlands. My mother was a Dutch Burgher and every Christmas was celebrated with Breudher for breakfast.
It has become a tradition to make our own bread dough and then make this delicious ye**ty breakfast cake. The smells as it bakes brings the house alive with memories of our childhood and Christmas.
Sliced and served with lashings of butter, Edam cheese and bananas.
